I like Sake kasu in my miso shiru and use sake kasu and olive oil for a face mask. I am wondering if you heat the sake kasu, would that not kill the beneficial probiotics and enzymes and reduce the vitamin content? I understand it can still be beneficial as a prebiotic, but I would like to be able to eat sake kasu with all of its benefits. I found the taste too strong when I tried eating it without heating it.
Thank you for your comment🙋♀ Sake lees contains yeast, but yeast is killed by heat of about 40°C. Vitamins are also easily destroyed by heat. On the other hand, dietary fiber and minerals contained in sake lees are resistant to heat, and these nutrients are not lost even when heated. To eat sakekasu without sacrificing its nutrients, it may be best to blend it with soy milk or eat it blended with yogurt or other fermented foods🙌
Sorry for the delay in replying. According to an American who is familiar with Japanese sake, it may be a good idea to contact an American sake brewery and purchase sake lees.
