  • Preserving Garlic // Jeni Gough
    Brine
    5 cups white vinegar
    2 cups water
    2 tbsp granulated sugar
    2tbsp canning salt
    Fresh dill sprigs
    Bay leaves
    Thyme sprigs
    Process half pints for 15 minutes in a WB canner.
    Garlic confit
    Cover peeleed cloves with olive oil (not extra virgin) cover by at least 1 inch. May also add a couple sprigs of fresh Roemary or Thyme.
    Bake at 225° for 2 to 2 1/2 hours until softened. Cool, store in airtight jar, keep cloves submerged and covered with oil. Store in refrigerator, Will keep for 6 months.

    ON the rare occasion I have to much garlic I put it in a jar and straight into the freezer. It is easy to slice, dice or whatever you want to do with it.

    That is a nice top That is a really good deal on garlic i am finally going to be able to to get to our outlet store over here soon but it is a shame because i still do not have my freezer from my friend because she has problems of her own but hopefully it will happen soon because I have to get my rhubarb picked again you can water bath garlic that is awesome

      What ways do you use the picked garlic? Just as a snack? And I did not know I could dehydrate garlic. So I would put it in the food processor, don’t add oil, and then dehydrate it?

    I’ve been looking for years on how to pickle garlic. In Canada we can buy it in the grocery store. Have not found any here in the usa. Thx for sharing. Will def try this

    The paste can be flash froze on cookie sheet by using small cookie scoop. Basically same as ice cube trays. After frozen, take out & place in plastic freezer bag.

    I have never heard of pickled garlic but now I must try some. I mean its garlic what's not to love. I love the idea of the confit in the oven as well. I bet your house smelled wonderful during all of this garlic processing. Garlic paste too. Now I need to go to Sam's bag buy all the big bags of garlic. So what would be the different applications for each in your kitchen?

    Thank you for these great garlic recipes with clear concise instructions. With 15 rows 12 feet long. I would have to say I have a lot off garlic.
    One question can the purree'd garlic if you add olive oil to it plus some above to cover. How long can it be out of the fridge? I need to ship some of my garlic 1500 miles away. Thank you for your feedback.

    More great content, Jeni! I've never pickled garlic - only fermented it. I'm curious - how do you use your pickled garlic? Sometimes, with the fermented garlic, I just eat a clove as is! Usually though, I mince them up and use them in a salad dressing.

      Garlic paste only 2 weeks, but 6 months if you freeze it. Confit 3 months.

    I’ve never heard of garlic confit. What do you do with it?

      It's cooked garlic, use it in any recipe! pasta sauce, garlic bread, sandwich spread, put it on burgers, vegetables, whatever you like garlic in or on!

    I pickled garlic awhile ago. We love garlic BUT I’m not sure how to use the pickled garlic other than adding to my lettuce salads or just eating it. What do you do with it?

      I chop them and put them on sandwiches, top cooked vegetables with them as well as pastas and cooked meats, on Hot Dogs, hamburgers, tacos.

      I slice it and serve it on veg, meat, sandwiches, hot dogs burgers, er also like to just eat it as is! They are so good!

    I wanted to buy that peeled garlic( Spice World) from Sam’s but it said “ a product from China” so bought the bag garlic instead.
