ON the rare occasion I have to much garlic I put it in a jar and straight into the freezer. It is easy to slice, dice or whatever you want to do with it.

The paste can be flash froze on cookie sheet by using small cookie scoop. Basically same as ice cube trays. After frozen, take out & place in plastic freezer bag.

I bet your house smelled wonderful during all of this garlic processing. Garlic paste too. Now I need to go to Sam's bag buy all the big bags of garlic. So what would be the different applications for each in your kitchen?

One question can the purree'd garlic if you add olive oil to it plus some above to cover. How long can it be out of the fridge? I need to ship some of my garlic 1500 miles away. More great content, Jeni! I've never pickled garlic - only fermented it. I'm curious - how do you use your pickled garlic? Sometimes, with the fermented garlic, I just eat a clove as is! Usually though, I mince them up and use them in a salad dressing.
It's cooked garlic, use it in any recipe! pasta sauce, garlic bread, sandwich spread, put it on burgers, vegetables, whatever you like garlic in or on!

Garlic paste only 2 weeks, but 6 months if you freeze it. Confit 3 months.

I chop them and put them on sandwiches, top cooked vegetables with them as well as pastas and cooked meats, on Hot Dogs, hamburgers, tacos.
