I never ate salad before keto. Now I have one almost daily. I have been on keto for 13 months and reached my target weight of 140 lbs 6 months in. Holding steady for another 6 months and counting.
I've lost 42 pounds since Sept. 9th on Keto. I still have another 30 to go to reach 190. I added in a 24 hour fast the last 2 weeks. Been hard but worth it.
I loved when you said you were a Pennsylvania Dutch girl! My grandparents moved to Somerset, Pennsylvania from Germany and my mother grew up there so every New Year’s day, she would make pork and sauerkraut and mashed potatoes. I love Pennsylvania Dutch food, but it’s very fattening and full of sugar so I don’t need it much anymore. I would love visiting my grandparents, we lived in Michigan at the time, and we would go visit Amish country and buy canned pork and sausages, we’d always stop and get maple syrup in the Fall. I loved seeing all the maple trees with buckets stuck to them collecting the sap. We also, always bought dried corn from the Amish and had that every Thanksgiving. I miss those days - I’m 66 now and I haven’t been there since I was 12. I love watching you two. I’ve just recently found your channel in the last three weeks or so. I started low carb intermittent fasting January 12. I love eating this way! God bless you both😊❤
Living in So. CA, I have a huge avocado tree in my front yard. I easily get 1K avocados or more off of it each year. So avos have been a big part of my diet. I use them in smoothes all the time.
I'm from the UK , Brussel sprouts are something of a dietary staple here one of the traditional components of a "Sunday lunch" and an absolute must with Christmas dinner . Having your parents try and get you to eat sprouts is a battle every Englishperson is very familiar with !
For a quick dinner, cooked chicken or pork or sausage, topped with sauerkraut, low carb thousand island dressing and shredded Swiss cheese. Bake or microwave until heated through and the cheese is melted. It’s a “Reuben”. Yum and super fast to prepare.
Bacon! I did not eat a lot of bacon. Now, I seek local bacon that is not full of nitrates & other gunk, and is humanely raised. I've always loved dark chocolate, but not to the exclusion of milk chocolate as I do now. Milk chocolate is a holiday treat, even then I can only eat a small amount before the sugar negatively affects me. I've always been an avocado lover. Today, my favorite breakfast is 1 or 2 hard boiled eggs with Primal Kitchen Avocado Mayo, a green onion, some cilantro, and 1/2 of an avocado. Sometimes that is too much to eat at once but on the mornings when I am really hungry I can eat it all & be satisfied until lunchtime or later. I tend to skip dinner on my IF schedule. Oh and MCT oil lol yeah, I'm with Dr. Keith no way did I EVER think I would use MCT oil! Of course now it goes in coffee every morning. I have been off of my diet for the last little while, and am actually looking forward to getting back on it and then going Keto for several months. That's another thing that has changed! No way did I ever WANT to get back to my diet before now ;-) Thanks you two, happy New Year!! See you in 2021.
Keep an eye on your ALT (liver enzymes). Depending on where it's sourced, chocolate can contain a lot of heavy metals (e.g. cadmium) I started eating 100% organic chocolate, about two ounces every day, and my ALT went through the roof. If your squares are small, you should be fine. It does take away the desire for more sweets.
I do the same, with 72% or higher. Usually 2 squares hits the spot. My 'evening' meal is usually pretty early, 5:00 or 5:30 at the latest. It helps to have a distinct end mark for the day's eating.
I thought I didn't like brussel sprouts,then I learned you have to cut them in half to cook them! Made all the difference in the world. Took away the bitterness. Now I eat them almost every day cooked in coconut oil! YUM!
I make my own sauerkraut, its super easy, cheap and you can adjust it to how you prefer it. I have a clay pot designed just for making it. I also make Kimchee even more.

I hated pork rinds before keto... now I love them for an occasional item to include, and there's so many good brands now that are super perfect for a keto lifestyle - read the labels to make sure they're fried in their own lard/ fat... some pork skins are fried in other oils... just be aware...
Be sure and check that they were cooked in their own fat and not some industrial oil which will be on the ingredients list. They are excellent with salsa and/or sour cream!
plain water! I always know when my carb level is too high as I start to find plain water not so palatable , I start to need some squash in it. When I have been low carb/keto for a few days it goes back to being a welcome thirst quenching drink!

I found that when I plateau it’s because I’m not eating “enough” fats. So I will eat macadamia nuts for a snack or green olives. I avoided them before because a low fat diet was so important to good health. I knew my diet before keto wasn’t perfect, but now I realize how bad it really was.
Started keto diet mid November. Lost about 24 lbs. total. I am now having a problem getting and staying in ketosis. I Mojo Keto monitor. I have been fasting the last 62 hours and only yesterday was in mild ketosis. This morning not in ketosis!. Nothing but water, ice tea, coffee. Very Frustrated. I heard this happens to some people? I plan to have an omelet today and go back to doing intermittent fasting 16/8 like I did before the holidays. Any suggestions?
I have found that the higher fat in my diet really changes my craving for sugar. Thank goodness! It only took me a week to get over the cravings! But, it was quite a mindset change to add that first tablespoon of MCT oil and/or cream to my coffee in the morning! Like everyone else, I kept thinking, ‘this can’t be good for me!’ Yet, it’s been the opposite of that that brought me to type 2 diabetes at 49. So, now that my insulin is under control with no meds, I’ve felt better and more energy than in the last 10 years! Thanks to you both! Have done the low-carb 28 day challenge to get me started a few months ago and haven’t looked back!🥰🥰🥰
It is what I don’t eat that has changed the most. The only thing that I have added is fat(saturated) be it fattier meats, MCT oil, butter, and heavy cream. I was always more low fat, but most of the fat I did consume was unhealthy as we now know.

Absolutely, my taste has changed. I used to hate, hate, hate the smell and taste of bacon. Now, I can't get enough. Another thing that I tried numerous times to like but never did, were olives. Now, I don't understand how I never did like them. 😊
Sauerkraut and kimchi and pork rinds. I was also thinking I was salt sensitive, so avoided it altogether, not realizing the whole salt-potassium balance was what would keep from turning into a balloon!

Just like Mushrooms, cocoa is good for testosterones. MCT and Heavy Cream are a must for my coffee Lots of green tea Apple cider vinegar 😋 Brussel sprouts and vile weed AKA Broccoli 🥦 I don’t eat Yoghurt anymore because of the sugar but I do eat a ton of cheese 🧀 I discovered Maca root powder and I love it. I eat more meats and eggs that I did before keto. Big salads are a must
I have a bowl of porridge everyday and quite often add a tea spoon of organic honey. Honey is my only sugary treat that I have. I am not on a keto diet but I try and keep my carb intake as low as possible. I like you Becky, use to have everything low fat, as we're told here in the UK that was a healthy diet. Now I have everything full fat and cream, I would never have had as I was told that would clogg your artereries. I wish you both a Happy Xmas and enjoy the festive period.

I was born and raised in California, but I could never get used to the taste or texture of Avocados. I didn't mind them so much in guacamole, but eating one sliced, not so much. One thing we do eat a lot of now is asparagus, my five year old granddaughter's favorite meal is baked salmon with asparagus! Keto is an interesting journey!
Years ago a friend gave me a pice of 75% dark chocolate claiming she loved it and it tatsed like dirt to me. I was a sugarholic, too Dr Becky. Thre years keto and 85% is what I enjoy and usually only one square after dinner is plenty because the flavour is so rich.
I felt the same way , too. My tastes for chocolate has changed dramatically, too. I buy 85% chocolate bars at Aldi. 6 little bars for $1.99. They satisfy my cravings and they’re delicious and don’t cost much.
What's funny is I am dissapointed when people buy me dark chocolate as a gift and it's less than 90% because I find it "too sweet". I still eat it though :D

I'm 56 years old and I've hated coffee all my life until a few months ago. Then suddenly I began to crave it. I have no idea why. Even odder I drink the thick, boiled Turkish or Arabic style coffee with no sugar, which is pretty strong.
@@DeafSeattleGuy36 lol I really don't know. I completely eliminated sugar and my tastes changed. I began eating 90% chocolate, which is a bit bitter, but I now prefer it. And I live in a fairly coffee oriented culture, and frequently made coffee for other people. And one day I just thought, I'm tired and that doesn't smell as awful as I remember, so I had a cup. To my surprise, I liked it! I think it tastes a bit like the bitter chocolate. And the best thing was that I didn't associate drinking coffee with food like I do tea. I always used to eat something carby with my tea, and I still automatically want something to eat with my tea, which is where my 90% chocolate comes in. 🤷♀️ And now I'm having fun experimenting with different kinds of coffee and techniques of making it as a calorie free treat in the day. French vanilla in a French press, Turkish style with lots of cardamom, a few pieces of cinnamon and a clove in the French press or cocoa in basically anything. We got a moka pot too. I used to try new desserts, now I try new coffees.
Same here. Love it all now and I taste sweetness in things that I never understood had sugar in them. It's like you have a heightened sugar detector. I can even smell sugar! Today I'm eating liver, brussel sprouts, sauerkraut, broccoli with butter, yum!
So true about adding foods we hardly ever ate on the SAD diet. The low fat mantra has practically hypnotized everyone in the last 40 yrs. Biggest removals in our diet has been sugar and pasta...doing LCHF. Added full fat cream cheese too. Lots of recipes use it instead of flour+butter roux and milk. 5% full fat Fage yogurt is a favorite. Sweetleaf flavor drops are great to flavor coffee.
Fresh brussels sprouts, halved, 4 mins in the microwave, serve with butter, black pepper and grated parmesan. One of my favourite lunches. I like the strong chocolate too, I go for the lindt 90% by choice. But I must admit I have a soft spot for the lindt 65% milk chocolate from time to time. Not easy to find everywhere, but rather different.
Hi, I love you guys and I have your 0,1,2,3, guide. One of the things that I have as a snack while on Keto is a few chunks of raw coconut. I like the crunchiness to it, not to mention the good fats.
I never ate Chia seeds or pumpkin seeds before going low carb. I drink ACV with fresh squeezed lemon and water every morning before my coffee. I used to force myself to eat salads, but now I love a large daily salad with mixed greens, boiled egg, avocado, bacon, Parmesan crisps, chopped walnuts, tomato, and homemade dressing. It’s delicious! Great list. Would love to get your sauerkraut & sausage recipe! Thanks!
Long slow cooked (3-5h, minimal heat, covered. Add a few sage leaves) porc belly in white cabbage or sauerkraut is the most divine meal I can think of.
I really miss having a cookie or what we call a biscuit here in the U.K. with my cup of tea or coffee. I think it is a texture thing more than the sweetness that I crave. I might try making some keto cookies.

When I first went keto, braunschweiger was a common food I 'gave up' as I could not imagine eating except as a sandwich. Months later, I rediscovered - just slices on a plate - the bread was never necessary!

I have started my Keto Diet only few weeks ago after I did my 7 day challenge with no food only water, bone broth and morning black coffee. I lost 3.5kg and I want to keep it and Keto diet has all the food I love including the Sauerkraut with my half German background. I still need to find out where I can buy your books in Australia.
I've never seen you mention cacao butter. I make my coffee with it every morning. It comes in chunks. I also add hemp seeds, MCT oil, cinnamon, a little dandy blend , some collagen powder and half and half. Whip it up in my blendtec and it is my "meal" until about 1 or 2 in the afternoon.
Brussels sprouts I wouldn’t touch before Keto. Now my favorite veggie. Roasted favorite for me. Or pan fried in bacon grease until crispy. Only use heavy whipping cream in coffee and to cook with. If need milk for a recipe I just use half HWC and half water. Taste has definitely changed since cutting the carbs.

Chicken liver pate. Just try it! I eat it with a spoon for snack. Also, full fat ricotta cheese with chopped walnuts for a treat. My roommate eats oranges and I use a little orange zest on my foods.
The only thing I could think of is cauliflower rice and mashed cauliflower. First time I had it, mashed cauliflower tasted amazing. Foods that I never tried before keto; MCT oil and nutritional yeast.
Have always loved sauerkraut, well since being an adult. 😋 Brussel Sprouts and dark chocolate are new:ish additions to my normal. Just starting intermittent fasting and low carb way of life. Considering Keto down the road. Won't even consider it until my chip, beer, margareta and sugar withdrawal is over though. Small, steady steps.
100% grass fed beef tongue is just to die for. 8 hours in the slow cooker (on low) covered in water with carrots, celery, onion, garlic and bay leaf, peal the tongue surface off (the only hard part), then cube and stir fry in EVOO. Man oh man, does it taste good! So tender. But other organ meats - beef heart, liver - are good as well. Can't get kidneys in the city, but they're suppose to be healthy.
Quality Greek yoghurt is my keto favourite now. Used to have that sweet tooth for flavoured low-fat yog & milk chocolate. Now I crave the bitter chocolate, deep coffee flavours and whatever greek yogurt is (chalky? creamy? ... just yummy). Fried sauerkraut is a revelation... love it
I use Lily's dark chocolate with stevia. I also made myself eat avocado, it was a texture thing for me but the nutrition in them made me adult and now I love them. I enjoy 1/2- a whole one almost daily! A1c is under control and Im off metformin and crestor! My fbs is still in a crazy range due to IR but I limit my total carbs to 20/day or less and have my app set at 1260 cal/day too but rarly hit that! Wt loss isnt happening sadly but I feel so much better overall!

@@sharonl2702 sauerkraut that you buy in the store is pasteurized, so there are no beneficial bacteria in it anyway. I would use that for the taste, but that's all. Make your own for the health benefit, it's super easy!
here is my list that is in addition to yours: Fermented vegetables of every kind, avocado oil, homemade ghee, fat bombs, electrolyte drinks, sour cream on almost everything, baked cabbage with olive oil, sour cream and ghee drizzled, salami with cream cheese, avocado topped with salsa and sour cream, collagen, bone broth, keto snacks, fried pig skin, fried cheese crackers, and lastly sardines.
I grew up in Ohio (lots of german foods). I never liked cabbage much. I do now. I like avocado now, didn't used to. I actually eat less vegs now than I used to, ..and that straightened out a chronic constipation problem. I 'd like for you to address that if you go Keto, and go off for a time, you might find out that you have a bad allergy to something that is not keto...I found out I was allergic to wheat and soy...didn't know that before keto.
Sauerkraut is DEAD EASY to make, especially with the spring loaded ball mason jar. I always keep a jar going in my closet. Yum!! Low carb is sustainable because it is delicious. I sometimes miss sugar, but bacon helps.
Great list! I love Brussels sprouts, kim chi, sauerkraut etc. But I am not good with fodmaps (and lactose) :( that removes a good few things from the table for me.
Same experience for me about all the ingredients you mentioned (I need to try out these Brussels sprouts wrapped in bacon). I also eat tones of cauliflower which I didn't really enjoy before. Eating things like liver or having fish like sardines or mackerel on a regular basis is also a habit I have taken while on keto and that I would never have done before (for those, not sure my tastes changed. It is more that I have decided to change my attitude towards these foods I think).

@@wtglb It has to be Himalayan Pink Salt or RealSalt as those don't contain nanoparticles of plastic. They are from ancient sea beds.

Two egg omelet with goat cheese and guacamole! Sometimes add meat, peppers, etc... I can now make a whole meal out of just this.

Also, the flavored ones usually contain MSG which is not good for you. I buy the plain and add "slap ya mama" seasoning or red hot sauce.

Brussel sprouts are awesome! One of my favorite vegetables for sure! Cut down the middle in half and bake them with some garlic salt 😍 perfection!

Never thought I could genuinely enjoy plain greek yogurt until I tried it with liquid allulose and vanilla extract.
I found that when I plateau it’s because I’m not eating “enough” fats. So I will eat macadamia nuts for a snack or green olives. I avoided them before because a low fat diet was so important to good health. I knew my diet before keto wasn’t perfect, but now I realize how bad it really was.
Started keto diet mid November. Lost about 24 lbs. total. I am now having a problem getting and staying in ketosis. I Mojo Keto monitor. I have been fasting the last 62 hours and only yesterday was in mild ketosis. This morning not in ketosis!. Nothing but water, ice tea, coffee. Very Frustrated. I heard this happens to some people? I plan to have an omelet today and go back to doing intermittent fasting 16/8 like I did before the holidays. Any suggestions?
I have found that the higher fat in my diet really changes my craving for sugar. Thank goodness! It only took me a week to get over the cravings! But, it was quite a mindset change to add that first tablespoon of MCT oil and/or cream to my coffee in the morning! Like everyone else, I kept thinking, ‘this can’t be good for me!’ Yet, it’s been the opposite of that that brought me to type 2 diabetes at 49. So, now that my insulin is under control with no meds, I’ve felt better and more energy than in the last 10 years! Thanks to you both! Have done the low-carb 28 day challenge to get me started a few months ago and haven’t looked back!🥰🥰🥰
It is what I don’t eat that has changed the most. The only thing that I have added is fat(saturated) be it fattier meats, MCT oil, butter, and heavy cream. I was always more low fat, but most of the fat I did consume was unhealthy as we now know.

Absolutely, my taste has changed. I used to hate, hate, hate the smell and taste of bacon. Now, I can't get enough. Another thing that I tried numerous times to like but never did, were olives. Now, I don't understand how I never did like them. 😊

Sauerkraut and kimchi and pork rinds. I was also thinking I was salt sensitive, so avoided it altogether, not realizing the whole salt-potassium balance was what would keep from turning into a balloon!

I have a bowl of porridge everyday and quite often add a tea spoon of organic honey. Honey is my only sugary treat that I have. I am not on a keto diet but I try and keep my carb intake as low as possible. I like you Becky, use to have everything low fat, as we're told here in the UK that was a healthy diet. Now I have everything full fat and cream, I would never have had as I was told that would clogg your artereries. I wish you both a Happy Xmas and enjoy the festive period.

I was born and raised in California, but I could never get used to the taste or texture of Avocados. I didn't mind them so much in guacamole, but eating one sliced, not so much. One thing we do eat a lot of now is asparagus, my five year old granddaughter's favorite meal is baked salmon with asparagus! Keto is an interesting journey!
Years ago a friend gave me a pice of 75% dark chocolate claiming she loved it and it tatsed like dirt to me. I was a sugarholic, too Dr Becky. Thre years keto and 85% is what I enjoy and usually only one square after dinner is plenty because the flavour is so rich.
I felt the same way , too. My tastes for chocolate has changed dramatically, too. I buy 85% chocolate bars at Aldi. 6 little bars for $1.99. They satisfy my cravings and they’re delicious and don’t cost much.

What's funny is I am dissapointed when people buy me dark chocolate as a gift and it's less than 90% because I find it "too sweet". I still eat it though :D
@@caseybrannon4975 That happened to me yesterday when my brother came to cisit. I ate a few pieces anyway, since I never do...it was Guylian so only 5gm carbs each...but alos some sugar. Oh well.....I made sure my husband eats the whole box because he's not keto!

I'm 56 years old and I've hated coffee all my life until a few months ago. Then suddenly I began to crave it. I have no idea why. Even odder I drink the thick, boiled Turkish or Arabic style coffee with no sugar, which is pretty strong.

@@DeafSeattleGuy36 lol I really don't know. I completely eliminated sugar and my tastes changed. I began eating 90% chocolate, which is a bit bitter, but I now prefer it. And I live in a fairly coffee oriented culture, and frequently made coffee for other people. And one day I just thought, I'm tired and that doesn't smell as awful as I remember, so I had a cup. To my surprise, I liked it! I think it tastes a bit like the bitter chocolate. And the best thing was that I didn't associate drinking coffee with food like I do tea. I always used to eat something carby with my tea, and I still automatically want something to eat with my tea, which is where my 90% chocolate comes in. 🤷♀️ And now I'm having fun experimenting with different kinds of coffee and techniques of making it as a calorie free treat in the day. French vanilla in a French press, Turkish style with lots of cardamom, a few pieces of cinnamon and a clove in the French press or cocoa in basically anything. We got a moka pot too. I used to try new desserts, now I try new coffees.

Same here. Love it all now and I taste sweetness in things that I never understood had sugar in them. It's like you have a heightened sugar detector. I can even smell sugar! Today I'm eating liver, brussel sprouts, sauerkraut, broccoli with butter, yum!
So true about adding foods we hardly ever ate on the SAD diet. The low fat mantra has practically hypnotized everyone in the last 40 yrs. Biggest removals in our diet has been sugar and pasta...doing LCHF.
Added full fat cream cheese too. Lots of recipes use it instead of flour+butter roux and milk.
5% full fat Fage yogurt is a favorite.
Sweetleaf flavor drops are great to flavor coffee.
My newest favorite is Lemon water/2 tablespoons of Braggs ACV 30 minutes before any meal.

Fresh brussels sprouts, halved, 4 mins in the microwave, serve with butter, black pepper and grated parmesan. One of my favourite lunches.
I like the strong chocolate too, I go for the lindt 90% by choice. But I must admit I have a soft spot for the lindt 65% milk chocolate from time to time. Not easy to find everywhere, but rather different.
Hi, I love you guys and I have your 0,1,2,3, guide. One of the things that I have as a snack while on Keto is a few chunks of raw coconut. I like the crunchiness to it, not to mention the good fats.
I never ate Chia seeds or pumpkin seeds before going low carb. I drink ACV with fresh squeezed lemon and water every morning before my coffee. I used to force myself to eat salads, but now I love a large daily salad with mixed greens, boiled egg, avocado, bacon, Parmesan crisps, chopped walnuts, tomato, and homemade dressing. It’s delicious! Great list. Would love to get your sauerkraut & sausage recipe! Thanks!
Long slow cooked (3-5h, minimal heat, covered. Add a few sage leaves) porc belly in white cabbage or sauerkraut is the most divine meal I can think of.
I really miss having a cookie or what we call a biscuit here in the U.K. with my cup of tea or coffee. I think it is a texture thing more than the sweetness that I crave. I might try making some keto cookies.
We eat more expensive cuts of steak, shrimp, salmon and lobster, because on one meal a day this is affordable.

When I first went keto, braunschweiger was a common food I 'gave up' as I could not imagine eating except as a sandwich. Months later, I rediscovered - just slices on a plate - the bread was never necessary!
I love Brussels sprouts, they are easy to cook, and takes good. They are not bitter.

I've started to like brussels sprouts as well. If you fry them in a pan with some olive oil and salt they kind of taste like popcorn.
Love you! Why not simply cacao instead of chocolate? I choose to prepare it with almond drink(almond 7%, water, a bit of a sea salt) with water 1:1, to add some burbon-vanille and Stevia..., mix it in ca.60 deg..., amazing alchemy😍

I have started my Keto Diet only few weeks ago after I did my 7 day challenge with no food only water, bone broth and morning black coffee. I lost 3.5kg and I want to keep it and Keto diet has all the food I love including the Sauerkraut with my half German background. I still need to find out where I can buy your books in Australia.

Make kraut with variety of veggies, even add shredded brussel sprouts sometimes.

I've never seen you mention cacao butter. I make my coffee with it every morning. It comes in chunks. I also add hemp seeds, MCT oil, cinnamon, a little dandy blend , some collagen powder and half and half. Whip it up in my blendtec and it is my "meal" until about 1 or 2 in the afternoon.
Brussels sprouts I wouldn’t touch before Keto. Now my favorite veggie. Roasted favorite for me. Or pan fried in bacon grease until crispy. Only use heavy whipping cream in coffee and to cook with. If need milk for a recipe I just use half HWC and half water. Taste has definitely changed since cutting the carbs.
My husband is not picky about food, but he hated brussel sprouts until I cooked them in olive oil with a few of cloves of garlic.
Coconut Milk,,,I Drink 4oz twice daily,,,Also use it in Chia pudding along with heavy cream... Plus all the things you mentioned,,Best Regards
Greetings from Hershey! Bulletproof coffee almost daily with MCT oil, heavy cream, and butter! Delicious!!! I eat pork rinds regularly. Have tried rudabago to make French fries and acorn squash to replace yams for Thanksgiving! Quite good!!Cauliflower rice! Zoodles! The list goes on and on!
I had exactly the same process with the 85% chocolate. It was too bitter but now it's sweet to my taste buds. Same goes for Walnuts!
Chicken liver pate. Just try it! I eat it with a spoon for snack.
Also, full fat ricotta cheese with chopped walnuts for a treat. My roommate eats oranges and I use a little orange zest on my foods.
The only thing I could think of is cauliflower rice and mashed cauliflower. First time I had it, mashed cauliflower tasted amazing. Foods that I never tried before keto; MCT oil and nutritional yeast.

Have always loved sauerkraut, well since being an adult. 😋 Brussel Sprouts and dark chocolate are new:ish additions to my normal. Just starting intermittent fasting and low carb way of life. Considering Keto down the road. Won't even consider it until my chip, beer, margareta and sugar withdrawal is over though. Small, steady steps.
Avocado in my salad, MCT oil along with tbs of ACV and lime in glass of water, and avocado oil as my salad dressing.
100% grass fed beef tongue is just to die for. 8 hours in the slow cooker (on low) covered in water with carrots, celery, onion, garlic and bay leaf, peal the tongue surface off (the only hard part), then cube and stir fry in EVOO. Man oh man, does it taste good! So tender. But other organ meats - beef heart, liver - are good as well. Can't get kidneys in the city, but they're suppose to be healthy.
Quality Greek yoghurt is my keto favourite now. Used to have that sweet tooth for flavoured low-fat yog & milk chocolate. Now I crave the bitter chocolate, deep coffee flavours and whatever greek yogurt is (chalky? creamy? ... just yummy). Fried sauerkraut is a revelation... love it

I use Lily's dark chocolate with stevia. I also made myself eat avocado, it was a texture thing for me but the nutrition in them made me adult and now I love them. I enjoy 1/2- a whole one almost daily! A1c is under control and Im off metformin and crestor! My fbs is still in a crazy range due to IR but I limit my total carbs to 20/day or less and have my app set at 1260 cal/day too but rarly hit that! Wt loss isnt happening sadly but I feel so much better overall!

@@sharonl2702 sauerkraut that you buy in the store is pasteurized, so there are no beneficial bacteria in it anyway. I would use that for the taste, but that's all. Make your own for the health benefit, it's super easy!

here is my list that is in addition to yours: Fermented vegetables of every kind, avocado oil, homemade ghee, fat bombs, electrolyte drinks, sour cream on almost everything, baked cabbage with olive oil, sour cream and ghee drizzled, salami with cream cheese, avocado topped with salsa and sour cream, collagen, bone broth, keto snacks, fried pig skin, fried cheese crackers, and lastly sardines.
I love sauerkraut! I use it at a topping for my lunch salad every day!
I grew up in Ohio (lots of german foods). I never liked cabbage much. I do now. I like avocado now, didn't used to. I actually eat less vegs now than I used to, ..and that straightened out a chronic constipation problem. I 'd like for you to address that if you go Keto, and go off for a time, you might find out that you have a bad allergy to something that is not keto...I found out I was allergic to wheat and soy...didn't know that before keto.

Sauerkraut is DEAD EASY to make, especially with the spring loaded ball mason jar. I always keep a jar going in my closet. Yum!! Low carb is sustainable because it is delicious. I sometimes miss sugar, but bacon helps.
Exactly Dr. Becky....even 85 or 90% choc can be too much to have ready in the house!

Before beginning keto and if, I never considered as an essential food but now love it along with raw pasture eggs in my half and half milk shakes.
Great list! I love Brussels sprouts, kim chi, sauerkraut etc. But I am not good with fodmaps (and lactose) :( that removes a good few things from the table for me.
Same experience for me about all the ingredients you mentioned (I need to try out these Brussels sprouts wrapped in bacon). I also eat tones of cauliflower which I didn't really enjoy before. Eating things like liver or having fish like sardines or mackerel on a regular basis is also a habit I have taken while on keto and that I would never have done before (for those, not sure my tastes changed. It is more that I have decided to change my attitude towards these foods I think).
