Did someone say volumetric efficiency?
If the target afr screen (in text view) shows the same number across the top and all cells have the same value, then you need to go to Setup->Table Setup and load more columns. I used 16. You can set the first and last value, then press L to linearize them (there is also a button with a purple line to do the same). That should give you RPM x Load for the Target AFR screen. Hope this helps :)

There software are very tuner focused :)
And target AFR will vary by temperature and load. WOT may go into a power enrichment with will add fuel.. An EQ ratio will depict what AFR you choose the engine to run at at any given temperature, cold start enrichment and then slightly lean out as it warms up.

No one knows how the UA-cam algorithm does what it does.

How do you set the target A/F Map per RPM and load ?
Not sure about this exact software layout, but in what I'm working with your stoich ratio for your location is a set value in one of the general keys. Then the VE (RPM and load bassed on kPa vacuum and RPM) just basses everything off that stoicgh ratio.. Try getting an actual stoich ratio from a gas station attendant.. HA! Funny.. :-\
