Hey Friends, it seems the holiday season is already in full swing around here. We’re working, shopping, decorating, baking and going to all the parties. I mean the holidays are great but we can’t eat party food every night. In the middle of all the hustle and bustle wouldn’t you just love to sit down to a good old comfort food meal with your family? I’m sharing a couple of crockpot comfort food dinners that are perfect for this busy holiday season. So just sit back, take a little break and let me and the crockpot do the cooking tonight. My Favorite Crockpot Roast
2-4 lb chuck roast
1 can cream mushroom soup
1 cup beef broth or water
1 envelope dry onion soup mix
1 envelope dry brown gravy mix
I salt and pepper to taste as I’m serving this; those dry packets have a lot of salt

here's a tip on cooking dry beans.. don't add salt until the beans have cooked almost done. It makes the skin of the bean tough. Love the roast recipe, am going to try that soon!
I grew up in Canada but, my mom was from Oklahoma and she made some mean fried potatoes and beans and cornbread. My favourite comfort food. All of your recipes look fabulous!!!
I'm only on the first recipe but had to pause the video to say I can't wait to try this pot roast recipe. We make it the same way except I've never added the gravy packet...and it makes perfect sense to do so! Genius with the mashed potatoes!

I can't do potatoes and other hi carb foods due to type 2 diabetes, but will adapt your pot roast and veggies to broccoli, cauliflower or Brussels sprouts and side green salad fixins to this. Thanks for your suggestions!

I personally do not do potatoes for myself but my daughters love
'roasted mashed potatoes" as they call them. I also cannot do carrots for myself but the rest of the family can..type 2 diabetic here too

Hi there Mel! I'm just now getting a minute to watch some videos! Your recipes are definitely my style of cooking. Those potatoes look way too good. 😍 I love saving my ham bones in the freezer for beans. I haven't ever used foil in my crockpot, that's a great idea!
That is a pretty neat idea on the potatoes. The only thing is I like a little bit of crisp on mine, but it's nice to know they can be done in a crockpot. Your food always looks so good. ♥️
Yes, the crisp is missing, but it's a great alternative for when you're in a time crunch at dinner, you can toss them in the crockpot and have almost fried taters. 😀 Thanks for watching and I hope you have a great week 😊

I wonder if u took the crock pot insert n put in oven on "broil" wld it help get Tata's crispy. I've seen people do tht w alot of recipes to get them crunchy. 🤷

This chuck roast recipe turned out great! The best! Very tasty. It was the first dish gone at a church potluck. I used Swanson beef broth instead of bouillon cube. If you cant find everything at the store, one can substitute. It still comes out fantastic! Thank you!

Hello Mel. I have found you recently and so much enjoy your videos. Your roast is so close to what I make except I add 2 bay leaves every time. Just forgot once to add them and the whole family wanted to know why it tasted different, something was different. Hahaha. They are so funny but they made their point. Funny how family get use to the way we make meals a certain way. Looking forward to the next video. Thank you for sharing all the goodness you create.

It really surprised me the first time I made them, too! Just give them plenty of seasoning and plenty of time to cook and it's ALMOST as good as pan fried LOL But it's much easier when you don't have to baby sit a pan right. Have a great week!

My Dad would cook the beans on a wood stove in his garage and to thicken them he would take the left over gravy (if any was left over) from that morning to thicken the beans with.

Yes, they have a nice crusty side where they are face down in the butter but nice and fluffy inside. Lots of flavor and seasoning options too!

I think if you sear it I've learned that if you take it put some flour on it put it in a pan with olive oil and sear all sides it even locks in the juices more

Cut up a onion an let it cook in your beans.
The onion really flavors the beans. My mom taught me that. I was surprised you did not do that.Also if you soak your beans for one hour with a teaspoon of baking soda, it doesn't take the beans so long to cook, if you presoak them. The soda takes out the gas in the beans. So your not overwhelmed with being fast from the beans. It all looks so good. I was raised just the way you like to cook.from one country bumpkin to another.

Give them a try, lots of option for flavors in seasonings, and a nice crisp on that scored side too!
