I did the eggplant last month because I was craving catfish. It definitely did the trick. I was pleasantly surprised.

Finally found Banana Blossoms at a Asian / Pacific Market. They were only $2 a can (btw: super expensive on Amazon) I made both Blossoms & Eggplant. Both were good but Blossoms definitely mimicked Fried Fish! Super Yummy!

I tried the banana blossoms as chicken a few months ago. It was really good. My grand children and son in law are my taste testers. Today I did the eggplant fish and as you say, "ITS SOOOOO GOOD ". Which it really is!!! Thanks for the recipes!! I hate cooking and you make it look so easy and fun!!!🥰🥰
This looks so good! You are very creative. I usually do "Fried Ish" as I call it with tofu, almond milk, old bay and fish fry. I'm hoping to use less tofu and more natural foods in my recipes so thank you so much for this! Im going to make it Friday.

TFS queen the salt on the eggplant draws out the bitterness from the seeds which is why it ‘weeps ‘ and the residue is dark 🤷🏽♀️

Salting eggplants actually gets rid of the bitterness. So it's very productive. Italian chefs salt theirs all the time.

I usually just get the gardein fishless fish and they are good. I’m going to try the banana blossom this weekend maybe. I’ll let you know how it turns out!

I put the eggplant skins in the oven on a silpat at 325 degrees after tossing them in olive oil and salt. Let them go about 30 mins, flip, let them go until they crisp up. A perfect snack!

Still worth doing the aubergine/salt thing if you are going to put them into water after. The water that the salt draws out tends to be more bitter. The process also softens the pieces :)
