This is my 1st time growing eggplants & I had no idea what to do with them. After seeing your video I felt inspired & tried your recipe. Albeit I subbed the red wine vinegar with apple cider vinegar, and subbed the capers with green peppercorns without any added black pepper & it turned out amazing! I am truly happy with my results. Ty so much for sharing!
Thank you! This is a definite keeper here. You can coat slices for parmigiana, flash freeze the slices, and then keep the slices in a large freezer bag for later use, too, if that's something you like. ☺️
🥰 I'm so thankful it has inspired you! I liked that it didn't require a lot of eggplant to make since I haven't been able to harvest a lot at one time. 💜
@mymodernhomestead I FINALLY have ONE flower on my ONE stinking plant. Fingers crossed I get at least one! Lol! I'll have to pick some up at the Farmers market this coming weekend.
I think that leaving your peppers whole in the oven would make peeling them easier. Especially if you put them in a plastic bag after they come out of the oven and let thdm swet for 5-10 minutes
My Marine hubby taught me to put a slice of bread hanging out of your mouth while cutting onions...and you wont cry..lol...it works..I buy and chop onions in bulk for my freezer n I cant live without the bread...lol
You are very welcome! I am not sure if it is or not. You could use a test to check the acidity to be sure. I did do a quick Google search, and another site had a recipe that was water bathed. I wish I could be of greater help with that answer. 💜
😆 Too funny! Yes, I love to watch them! They are the cutest couple together! Did you see her eggplant chili today? I thought that was such a unique recipe. I will probably never make it since I don't grow a lot of eggplant, but I would sure love to know how it tastes! I am still watching to see how she makes her Caponata! Thank you for being here and watching! 🥰

It can be used any way you would like. Our favorite way is to layer a piece of bacon on a crostini and top it with this. I eat it this way for a light lunch or snack. Other people eat it other ways, too. It's totally up to you. Thank you for being here and watching! 💜
@@rebeccatodd2261, we have already eaten a jar of it. If you go to the Shorts on my homepage, I have a short about it. Everyone in my family loves it. 🥰

I found it so odd that peppers and olives are the dominant flavors in this. I would never know there were eggplants in this if I had not made it myself. I can fully respect someone not liking eggplants, though, and not having a need to preserve them. 🥰💜

That's awesome! Congratulations! 💜
Wow! This is a super canner recipe. I'm looking for something to do with my eggplant too. I usually do ratatouille. This looks good!

So sweet. Thank you! 🥰 It really was worth it. Everyone here really likes it. I will definitely make it again!
Ooooo!! Another rockstar of a canning recipe that 10000% inspired me 🖤
I loooove eggplant! I so wish I had an abundance of it!

I think you are probably very right! Thank you! 🥰 I appreciate you being here and watching and leaving feedback! Blessings! 💜
It sure would have been easier. My peppers have bits of skins.
That’s what I do too.
Blister them, seal, cool and peel.
I've never seen or heard of this dish but need to preserve some eggplant. I have 5 pints in the canner. Hope others will eat it, also.
Hope you enjoy! It is so good on a piece of crostini with a small square of bacon! It is a family favorite here. 🥰

Is this recipe acidic enough to water bath can? Thank you for a great idea for using egg plants or as we call them in Italy Melanzane.

Can I make this with my steam canner?
I don't have the directions for doing it in a steam canner, but I imagine it would work just fine if done properly.
Is it a side dish?

Looks delicious but I just don't like eggplant.🍆

I ALWAYS hated eggplant, it depends upon the size and how it's prepared. Don't get those 2 footers, they're bitter. Former eggplant hater her.
