    Michele, your maiden voyage into home instructional videos is definitely a smashing success! Move over Martha Stewart!
    I've never made apple butter and had no idea it was so incredibly easy to make. I don't have an apple tree, but I'm pretty good at finding sales on fruit, so I'll be making some soon.
    I love that you addressed using all the fruit. Growing up in a family of seven kids, my parents would never let us waste food. We always had a huge garden that fed us all Summer, then my mother canned enough to get us through Winter, and right into Spring. If the vegetables or fruit had bugs or worms, my mother always cut around them and fed the scraps to compost pile.
    I hope you'll do a video on canning. It's the one skill I didn't pick up from my mother, and I'm rather afraid of trying it -- I don't want to poison us.

    • @ChocolateBoxCottage
      @ChocolateBoxCottage  5 років тому

      Good thing you can't see my face - I'm blushing! Thank you for that outrageous compliment!
      What a mom! Keeping a family (of any size) fed without relying primarily on the grocery store is a high-level feat. Thrift is not a new thing, as you are well aware. Women, and men, have practiced resourcefulness forever. I hope to help bring it back.
      I will do some canning videos, I'm sure, but if you're interested in learning the whole art, I would recommend checking out Homesteading Family's Abundant Pantry Canning class. It covers everything you need to know to can....well, anything! And the instructor, Carolyn, is not only knowledgeable, but a wonderful friend.
      Thanks so much for your comments, Tina.
      XOX, Michele

      Hi Ellen, thanks for visiting. I am thankful Carolyn sent you over, that was so nice! I plan to make lots of videos along these lines. I am re-evaluating my vinegar-making method. It's always been kind of loosey-goosey and I am studying the subject in more depth, so come springtime I should have a better and more predictable method to share. In the meantime, I'm still experimenting. I'm with you, I love to make use of all the odd bits and pieces I can in some way. ~Michele

    I've got to share something with you.
    Ground beef, pork, chicken and any kind of meat that could possibly dry out while cooking........... This is the bomb, mix 3/4 tablespoon baking soda with 1/8 cup or so of water.... throw it in it, on it and around it or mixed in ground beef or pork ground chicken. It browns meat that wouldn't before it dried out. Steak too, say your steak was too thin to brown before it brunt or dried out. I found this on America's test kitchen it works and it will be good.... okay done. LOL ( adjust it ) You've helped me so much and are very kind and take your time to help. This is all I got now, baking soda is my friend.

    • @ChocolateBoxCottage
      @ChocolateBoxCottage  5 років тому

      You can use pears, they have less pectin so pear butter is a softer spread. If you want, you could combine pears and apples (with their peels) to increase the pectin content and get a nice, thick, rich butter consistency. Pear butter is sooo tasty, you've given me an idea! Thank you!

    This video is very informative, Michele! Thank you. I have a question: Do you know if I can use Asian pears to make a similar butter? I look forward to your video on how to make the apple scrap vinegar you mentioned. I never thought of making my own and it sounds like a great idea! Thanks again!

    • @ChocolateBoxCottage
      @ChocolateBoxCottage  5 років тому

      Hi Julie! You can use Asian pears, but there are 2 things to keep in mind. Pears in general have less pectin than apples so you will end up with a softer consistency. I call it Pear Honey - it is DELICIOUS. Asian pears are also a low-acid fruit and cannot be water bath canned unless the correct amount of acid (lemon juice) is added to adjust the pH. You could probably find this info in the Ball Blue Book. Make sure it is a recent addition for the most current info. You could, of course, skip all that and just freeze it, which works well. Love, Michele

It smells like pickles can I leave the cores covered with cloth on the counter till I can get the smell out with the dry mustard? Added baking soda too, this might work it will be later tonight or in the morning.

    • @ChocolateBoxCottage
      @ChocolateBoxCottage  5 років тому

      No need to panic, Valerie. You don't need the lid for the first month. You'll cover the jar with a clean piece of fabric or a coffee filter secured with a rubber band. Take a peek at Mary's Nest video and blog post here. how-to-make-homemade-apple-cider-vinegar In the meantime, yes baking soda is good for removing pickle odor. Make a paste and rub it into the lid and set in a sunny spot for a week or so. That usually does the trick. ~Michele
