Just a quick tip for planting sugarcane is that you do not have to use sand to plant it. All you need is water and either sand or dirt!
I just wanted to say that, I don't know why everyone thinks that it grows faster on sand
Oh great, NOW you say that.. after he spent 14 days removing blocks and building left and right just to plant some damn sugarcane.. Or maybe he knew that, but he didn't know what else to do in the game but he had to make content for a video, so he complicated on purpose and he forced his muppets to remove the blocks just to add some minutes to the video..

Fun fact: you can also go to the nether to get ender pearls there, so even if at your island the pearl drops are unlucky you can still get pearls.

Btw you done need sand for sugarcane, it can be either dirt or sand!
And if you have extra gravel and not enough dirt, you can make coarse dirt and get more dirk from that

Also, you can place a one pixel tall block/carpet and the animals aren’t able to get out but able to get in, but you can get in and out easily
