Then we took the wrappers, where were stiff, and soaked them in water to soften them. We put down the shrimp, bean sprouts, etc and rolled them up. Then you just eat, there is no frying that happens --- so they are very light and delicious!!

Yes, the apostrophe-S can show possession, or be the contraction of IS. One is not a contraction, but a way of showing possession, the other is a contraction so can be replaced with the word 'is'.
Yes, when the Z is followed by a word that starts with the S, many people would make that an 's' sound (example: is something). I think it's less common with the SH sound, though to end an unstressed word, I can see dropping the Z sound (like in 'is she').

I wouldn't say anything there is reduced, but KEEP will be a stressed syllable and THIS an unstressed syllable. So it will sound similar to a two-syllable word with stress on the first syllable.

Thanks for this amazing lesson! I like studying contractions to improve my listening skills, but sometimes I have problems with "they're" and "there". I have to stop and thinking on the context, usually is easy but could be tricky for a non-native speaker. =)
LOL this is a traditional Chinese food. in China,it is called chunjuan(春卷 spring rolls ) that means people will make the food in the spring by the potherb . i love it

I got almost everything, just missed what food is that and what is that thing they were using to wrap up. Ahhh...I learned what I can say at restaurants when they ask if I need something else. Food for thought: the clitic "s" in she's and he's aren't actually voiced... They are distinguishable from the "s" in it's, but why? Complicated but interesting and worth exploring because of how confusing it can be for non-native learners. I like your video though! It shows real usage which is awesome and commendable!

Reduction and rhythm/stress make up the character of American English! Certainly more important than any individual sound.
