Ingredients:-
Raw mango (कच्चा आम) - 2 kg.
Mustard Oil (सरसों का तेल) - 100-150 g.
Yellow mustard (पीली सरसों ) - 4 tbsp/1/2 cup.
Fennel (सौंफ ) - 4 tbsp/1/2 cup.
Fenugreek Seeds (मैथी दाना ) - 2 tbsp
Cumin (जीरा ) - 2 tbsp
Whole Dry green coriander (साबुत हरा धनिया ) - 4 tbsp
Nigella Seeds (Kalonji) (कलौंजी ) - 2 tsp.
Vinegar (सिरका ) - 1/2 cup
Kashmiri Red Chili Powder (कश्मीरी लाल मिर्च पाउडर) - 2 tbsp
Red Chili (लाल मिर्च पाउडर ) - 1 tbsp
Turmeric (हल्दी पाउडर ) - 1 tbsp
Asafoetida (हींग ) - 1 tbsp
Salt (नमक ) - 4 tbsp

Excellent! I have saved your recipe. Actually last year I had prepared mango aachar from our garden. But due to some reason after four moths fungus developed and we had to through them. This year also there are around 50 mangoes hanging from our tree. After lockdown period ie after 17th May we will pluck some and rest we will keep for ripen. This time I have purchased vinegar with Mother and will use as you have described. I am sure it will be very nice this time. Thank you so much ma’am. wow. meri ma banati thi few variety of achar her saal aur sabko bhejti thi toh humne kabhi seekha nai ki Ma toh banati hi hain. Par kya pata the ekdum se woh chhod kr jayengi aur sab soona kr jayengi.. She passed away in july 2011 tabse maine unka banaya nimbu achar sambhal kr rakha hai aur aaj tk aise hi rakha hai.. Aaj aapka achar dekh kr banane ka mann ho gaya ab main b aise hi banaungi.. Ma se nai seekha aapse seekh lia. Thank you so much 😘
