    Ingredients:
    For the Broth:
    • 2 onions, halved
    • 1 piece of ginger, 4 inches, sliced
    • 5-6 lbs beef bones
    • 2 cinnamon sticks
    • 3 star anise pods
    • 5-6 cloves
    • 1 tsp coriander seeds
    • 1 tbsp salt
    • 1-2 tbsp sugar
    • 6-8 cups water
    For the Soup:
    • 8 oz dried rice noodles
    • 1/2 lb thinly sliced beef
    • 1/2 onion, thinly sliced
    • 3-4 green onions, chopped
    • Bean sprouts (optional)
    • Fresh basil leaves
    • Lime wedges
    • Sriracha and hoisin sauce
    Instructions:
    1. Char onions and ginger. Rinse.
    2. Blanch bones. Rinse.
    3. Add bones, charred onion, ginger, spices, salt, sugar, and water to a pot. Simmer 4-6 hours, skimming.
    4. Soak rice noodles. Drain.
    5. Thinly slice beef.
    6. To serve, divide noodles into bowls. Top with beef, onion, and green onions.
    7. Ladle hot broth over the top.
    8. Garnish with bean sprouts, basil, lime, and sauces.
