I hadn't been to Thessaloniki for 17 years, after arriving at the hotel, the first place I went to was a bakery and bought Koulouria - nothing close to this in the UK :-(
Your cast iron skillet has a lot of rust from using it with water :(. Suggest you use an enameled cast iron skillet instead. Your recipe looks great, will be using it when out heat week is done.
Looks wonderful. But i think by mistake you mention 2 cups of water in the infredients. I think should be much less for brushing the surface. Thanks. And your daughter seems very proffisional baker.

They look so good. Only thing, they are not a bagel. What you need is a true New York bagel. The water makes the difference.
