I dehydrated potatoes last year. They would not hydrate. Stayed very hard no matter what i did. I may try your method and see if i have a better success. Thank you!
So here’s what you have to remember with this method… Which works really well… You’re only partially cooking the potato and you’re dehydrating it. So putting in boiling water rehydrates it and then finishes cooking it. My pieces were about 1“ x a halfinch and took about 20 minutes.

I do scallops often
Well, I have not tried scallops… But I’m not sure they would last long enough in my house to even try :-)
