Super mk and super circuit would be the easiest but it does have all the different colors on the track so that part could be difficult. All the other rainbow roads would only be possible in space because idk how u would make them with gravity.
you could also try RMX Rainbow Road 1 or RMX Rainbow Road 2 from Mario Kart Tour, as these 2 tracks are also mostly flat based but RMX Rainbow Road 2, has a hill on it and bouncy mushrooms.

Toad's Turnpike would be a really fun one to do, lots of different vehicles outside the karts themselves, it's all mostly outdoors, and has an interesting cityscape backdrop. Also the track isn't super crazy with flips and loops and whatnot.

Using the paper printouts as reference points for size, shape, and color is a great idea. It's so satisfying, watching the pieces be cut to match the outline (e.g., the road and dirt areas). And the focus you have, being able to manage such tiny details in all of the pieces, dozens of times over. If you don't mind, I'd like to ask: do you apply any kind of water or other substance to your fingers when moving the pieces? For example, you're able to "grab" pieces by pressing them gently, and you can also release them with ease. That's pretty much magic to me. 😅 Excellent work, man! These sculpted scenes are incredibly impressive to watch. 🌟
That's my favorite part, cutting the shapes with the paper. For what you asked about the magic lol. No I don't do anything special, it just sort of barely sticks to your finger with a tiny bit of pressure and since it doesn't stick very much, it comes off just as easily. If it ever leaves fingerprints I use rubbing alcohol on a q-tip to remove it. I do this to every single clay creation I make.
