2:31 what is a stork-footed flick? Never heard that throw before

The flick is a side-arm throw commonly used in Ultimate. To get a DDC disc to fly at a 30 degree angle with a side-arm throw, often requires you to lift the non-throwing side leg in the air and to balance your weight on the throwing side leg (like a stork). In lots of these videos, including this one, I see disks often coming in at much greater than the supposedly allowed 30°, but no one ever makes an "angle" call, making me wonder how this is really supposed to be employed, and how useful the rule really is in practice.
One other issue I never see addressed, that often comes up in discussion, but might seem unlikely in real play is what happens when disks collide in mid air. Although one might think it unlikely, however, it actually occurs with some frequency, leading to consternation and confusion as to what to do with the resulting volley.

The angle call must be made before the disc lands. If the called disc lands safely inside the court then a redo is played. In friendly games "angle" is not called often but in tournaments it is sometimes made usually resulting in some discussion. In tournaments the 30 degree rule usually is interpreted as no more than 45 degrees particularly under windy conditions.
If two discs collide you play them as if they did not collide. The disc you threw must land safely in the opposing court.
