Looks delicious! My trick I learned that eliminates the fishy flavor trout and salmon can have is to remove the skin before the brine. Seems to help a ton! The whiter/yellow fillets are from Siscowet lake trout. They are super fatty. Next time you get one, try dropping it in a deep fryer in chunks like you would a wallleye. It will blow your mind how good it is.

What is the best wood to use for smoking
It's all preference... I typically use a competition blend from Pit boss. On the backs of the bags, it days what pellets are best for different meats.

This brine works for all fish. I smoked some salmon last summer, this exact way.

Do the fillets still good together without the skin? I have deep fried some in the past and really enjoyed it. Thanks for watching.

The smoke looked fantastic, but I prefer salty over sweet. We used to just smoke them with a saltwater brine.
