Double cream is British. Whipping cream is North American, US and Canada.
Also when I draw my circle on the parchment I then flip it over so no lead or graphite or whatever gets into/onto the Pavlova.
I too love the mango & coconut combination.
    Love watching your show.
But you introduced me to chili crisp oil and I now eat it out of the jar. Very bad habit😂😂

A great tip I received was to "paint" the top of a pavlova with melted white chocolate before you put the toppings on. This creates a moisture barrier in case it has to stand for a while before serving.

@@jennyrebecca7243she meant, I think, you paint with white chocolate before you add the cream. It's a great tip especially if the pavlova has to stay at room temperature for awhile.

I use a layer of white chocolate ganache under the cream, it is a nice in between of the soft of the cream and pav, it's fantastic with just blue and purple berries with no citrus too.

I think Marion should have turned the parchment paper around after she marked the paper with a pen. You do not want the ink to bleed into her pavlova. You will still see the circle on the other side without the danger of the ink bleeding into her gorgeous desert.

Not made the Aussie meat pie recipe normally make the british version, because it takes so dam long to cook we use a crockpot slow cooker to make large batches. Our crockpot is 6.5lt and we normally make 5 ish liter batches which take 8 hours on low and 4 hours on the high setting not hard and fast times all depends on the beef. We don't use cornflour but a roux with the beef fat [ if additional fat is need we add lard] to thicken the filling. Once finished we make some meat pies and potion the rest into freezer bags, layed flat pack sytle on a tray to freeze label/date/rotate stck in the freezer. the bags layed flat like a book are space efficent and defrost quicker for later use, than a frozen blob. This saves alot on time and energy costs, we do this with alot of foods beef/lamb/chicken soups stews fillings. The sauces/soups/stews/pie fillings also can well if you take the time and effort to do it properly and are a great pantry staple. Thank you for the recipes the meat pies and sausage rolls look real winners. Take care, God bless one and all.

    Australian classic dishes?
Even the pavlova arguably has its roots in New Zealand (1926).
Australia certainly didnt invent the pie.
    Roast lamb? You’re kidding right?
Sausage roll not sure about. Sounds German.
    Vegemite? Nope.
Vegemite is really Marmite which is a British savoury food spread based on yeast extract, invented by the German scientist Justus von Liebig. It is made from by-products of beer brewing (lees) and is produced by the British company Unilever.
Australia does produce great quality food due to its largely pasture-fed animals and abundant sunshine
