Jaggery added to boiling milk make it curdle. Sugar is the best choice. For Therattipal (Palkova) we can add jaggery because the texture will be like curdled milk. but for kheer its better to add sugar. Instead of white sugar you can add brown sugar.
This is a modified version. Traditionally it's made with just 3 ingredients. Milk, rice, sugar. NO flavouring agents, no condensed milk, no ghee. For one litre milk one fistful rice and three fourth tumbler sugar. That's the natural Kerala palpaysam.
Sorry to hear. Did you add sugar or jaggery? jaggery with milk curdle but sugar with milk never curdle unless something wrong with the milk or the vessel.
Sowmya.... Paalpaayasam pink colour la change anathuku reason vanthu 'Chemical reaction' of the milk with Aluminium, nothing else. Directaa Aluminium cookeril cook pannamal, keep the cooking ingredients etc. , in a separate vessel inside the cooker. Then Paalpaayasam, oru bottom thicka irukara vessel la gas la medium heat la, Raw rice 1/4 cup (new Raw rice or Pongal rice best for Paayasam) wash panni first half litre milk la cook for 10 minutes, stir well add another half litre milk and again cook for 10 minutes. Rice will cook well within this time. Add Elakkai powder and mix well. Just let to boil for a minute. Off the gas and now add sugar as much as you want or Milkmaid 1cup not much. Stir well. Garnish with fried Cashew nuts in ghee. Tasty Paalpaayasam ready within 20 minutes. If you add the sugar while milk is boiling, Paayasam's milk thickness neerthu pogum, taste um different aa irukkum. Thanks for the detailed comment and procedure. This time, I am not fully agree with your comment on Chemical reaction (with Aluminium). My mom always cook Pal Payasam on pressure cooker but in a vessal within cooker. The vessal is stainless steel. Good thing in this method is that we don't have a hassle of milk boiling / or burnt in the bottom. Even in the method i shown, i have used stainless steel cooker (not aluminium cooker). But i agree with your other traditional way of cooking.. my MIL does this way only. Again, thanks for your comments and critics.. this helps me to improve my cooking / presentation further. If we are making for prasad, we should use cow milk. cow milk gives nice pink color. Buffalo milk will be creamier than cow milk.

I tried this once but the milk curdled
Before adding milk, thoroughly wash the vessel or pressure cooker. Sometimes any left over or sometime if we didn;t wash the vessel, milk will curdle.
