    Ingredients
    Oil
    3 or 4 Four onions sliced
    2 cinnamon sticks, 6 cardamom, 6 cloves, 2 bay leaves, and 2 star anise
    2 tablespoon ginger and garlic paste
    1 kilo lamb shoulder cubed
    ½ tbsp cumin
    ½ tbsp coriander
    1 tbsp paprika
    1 tsp turmeric
    1 tsp chili powder
    1 tbsp curry powder
    1 tsp black pepper
    1 tsp salt
    4-5 tomatoes chopped
    3 tbsp yogurt
    Water to cover meat
    Fresh coriander and mint
    3 cups washed and soaked for 20 mins basmati rice
    Saffron - yellow food clour of turmeric in water
    3 cubes of butter about 3 tbsp
    Yogurt Salad
    yogurt
    Cucumber shredded
    mint leaves minced / chopped
    pinch of cumin
    pepper and salt to taste
    NOTE: The spice taste on this Biryani is NOT as strong as an Indian and the mint sauce. More spices can be added and a mint sauce can be added to the yoghurt. This is a subtle spiced dish.

    Wow, fabulous! Mine is cooking on the stove right now and the house full of the delicious aromas. I've misplaced a recipe book that had Middle Eastern Lamb so decided to check an online recipe and yours is the first one I found. Can't wait to eat it!

    I alwyas messed up on the rice by layering the rice first never occured to me to put it on top, cant wait to try this

    Wow Rik. That looks amazing. I’m still eating lasagna, I made 3 large lasagnas. My eldest took one to his girlfriend’s place and she wants my recipe; she’ll never believe how much veg I hide in a lasagna! It’s a great way to get kids to eat veggies. I’m definitely going to be making this biryani next.
