I hear it in my mind much like "All That Jazz", a similar tempo with that alternation between low notes and plinky backbeat. If you start singing "Santeria" a bit below normal tempo and snap on the backbeat, you can start hearing it in your mind, I bet.

The cover is excellent, but for fairness's sake let's remark that Bon Jovi has already adapted their own song in a jazzy style on their unplugged album, so the idea itself is not so original as some of the other covers done by PMJ.
