Easter Rice Krispies Treats (with a Cadbury Mini Egg Hidden Layer)

3 tbsp butter
10 oz (one standard bag) marshmallows, minis or regular
6 cups Rice Krispies cereal
8 oz of candy melts
1 cup of sweetened flaked coconut (I only used about 1/2 a cup of it) tinted green with a little green food colour.
10 oz of Cadbury Mini Eggs (or as many or as few as you'd like)
Easter Sprinkles./candies for decoration.
Melt butter and marshmallows on the stove on low or in the microwave for about 90 seconds or until the marshmallows are puffed and melted. Stir butter and melted marshmallows together until combined and smooth.
Grease an 8X10 baking dish. Spread 1/2 of the mixture in the bottom and top with a layer of mini eggs. Cover with the remaining Rice Krispies mix. Dampen your hands with a bit of water to keep them from sticking.
Melt the candy melts and spread over the Rice Krispies layer. While it is still not set, sprinkle with coconut and sprinkles.
Allow candy melts to set and then cut into squares. Best eaten the same or next day.

I never thought of using the microwave to melt the marshmallows and butter. I've been struggling with super rock-hard krispie treats lately and I think it's because I've been cooking the marshmallows and butter over too-high heat which caramelizes everything. Thanks so much for the suggestions and new recipe!

Ooh these look yummy. When I was in England they had mini egg chocolate bars I bet they'd be good in the middle too. I love those micro mini eggs.

Hi Tammy. I just made a version of your Rice Krispie Treats for the kids for tonight's dessert. It turned out great! I couldn't find green candy melts so I mixed blue and yellow ones together and ended up with a pretty pastel green. I also couldn't find any little Easter candy decorations so just used Easter Smarties and more mini eggs along with the sprinkles. The Bulk Barn in my area didn't have much choice this year in candy decorations however I don't think the kids will care, lol. All the best and thank you for sharing this recipe.

If your microwave is big enough to get a large bowl in there, it is the way to go for sure! I end up being impatient with low heat on the stove and usually scorch the bottom of the pan. Thanks for watching.

Very cute and colorful! I normally get my Rice Krispies Treats from the store, which are already made. But, do you want to know that the treats came out after the cereal? Pretty cool, right? I guess that the cereal was in the original recipe for Rice Krispies Treats!
