So the commissaries don't pick up the trash over the weekends?
I could only imagine what kind of vermin is running around those places at night. They actually probably create more health problems than they help.
umm use trashliners for waste and keep your bins closed not spilling from overfill. its not difficult to be hygienic.

Do you know if food carts are required to stay at the commissary over night?
They need to get rid of commissary restaurant don't have them and you clean them people no how to clean and use sanitizer spray and bleach to clean they trucks you dump your food from your home in the trash and grease!
If commissaries are so "gross" then why are they required by the government? Are there alternatives to using them?
Commacaries must meet and be inspected by local health dept, same as any restraunt.
If they are gross, report them.
I read on the Health Department's website that there are alternatives to these commissaries you could use a church kitchen because those all have commercial grade equipment or you could use a local restaurant who would be willing to let you use their facilities for a fee probably.
What do you mean not like the taco truck ??? If it wasn't for the taco truck you wouldn't have a food truck the taco trucks still running the show in Los Angeles you wont ever be as successful as a taco truck trust me!!!
