      For real coconut and spice in the middle is the real old time way I make it plus paint the top with sugar syrup

      @@grantvwalcotwalcot1029 why you people always criticise others? I am Bajan I make my bread how I like it, I dint care how you like it. I don't like a bread with a rough top nor too hard, I like my bread softer. These days dry coconuts are not that easy to come buy, then the grating is a chore I don't like. I buy the grated frozen one but I find that when you put it in the center it causes the area around to look damp like it's no fully baked. It's better to use the fresh one for the center. Everybody does not like to eat the coconut like that, even from childhood I will chew and chew coconut but can't get it swallowed. EVERY BODY DOES NOT LIKE THE SAME THING. Once I didn't like raisins in the bread, so leave people alone, you do what you like and let them do what they like how they like it.

      Therre is no tradition or hard and fast rule about putting coconut in the middle. Its a matter of choice.

      Ask these Lick mout Lils to buy a coconut bread from any supermarket in Barbados and tell us how many of those breads have coconut in the middle.

    Everyone adds different things, some use milk and some don't, same with eggs. What I do know is that it should not be beaten or mixed like a cake, you want the cake mix to be thick, lumpy and not at all over mixed like I see people do.

    This is not how coconut bread is made. You have to kneed it by hand. THIS IS COCONUT CAKE

      Why the heck are you commenting about everybody's sweet bread? You did it to Paulette. Who tells you that everybody want their bread kneeded? It's harder and dryer not every one likes that texture, I like a softer sweet bread. Why the heck don't you make some?

      Yes you can but it will make it richer try using half coconut milk and half water

    No bajan makes traditional coconut sweet bread like that. It is hand kneeded.....definitely.... not by machine. this aint coconut bread. where is the coconut in the middle. bad recipe. machine coconut bread???? buda wow

      I don't think it's right to say the woman has a bad recipe. To each their own. Certainly, you are welcome to say you don't like this recipe but to call it bad!? Come on now...not necessary.

      Some people use eggs in their coconut bread - its gives a richer flavour but for those who don't eat or like eggs you just leave them out and adjust the recipe.
