I don't like a bread with a rough top nor too hard, I like my bread softer. These days dry coconuts are not that easy to come buy, then the grating is a chore I don't like. I buy the grated frozen one but I find that when you put it in the center it causes the area around to look damp like it's no fully baked. It's better to use the fresh one for the center. Everybody does not like to eat the coconut like that, even from childhood I will chew and chew coconut but can't get it swallowed. EVERY BODY DOES NOT LIKE THE SAME THING. Once I didn't like raisins in the bread, so leave people alone, you do what you like and let them do what they like how they like it.

Hello! This looks like a great recipe and I'm about to make it, but how much water/milk should we put into the mixture? You hadn't said the amount in the video.
Everyone adds different things, some use milk and some don't, same with eggs. What I do know is that it should not be beaten or mixed like a cake, you want the cake mix to be thick, lumpy and not at all over mixed like I see people do.

You have so much sense, do you think Purity makes theirs by hand? It's done by machine silly man and you would still go and buy them without complaining. Go find something worthwhile to do.
Some people use eggs in their coconut bread - its gives a richer flavour but for those who don't eat or like eggs you just leave them out and adjust the recipe.

Therre is no tradition or hard and fast rule about putting coconut in the middle. Its a matter of choice.
