    I make a similar dish using apricot preserves instead of chutney. It’s sweeter, so I add a bit of red pepper flakes or chili powder to compensate.

      I immediately thought of apricots as a substitute! Do you do anything differently apart from the chili powder?

      @@aluminiumknight4038 Nope, just add as much or little chili powder that you like. I use about 1/2 to 1 teaspoon of Kashmiri chili powder because it’s not very spicy, but you might prefer something a bit stronger. It’s a really easy dinner while also being a crowd pleaser. Enjoy!

    That looks scrumptious Marc! I am glad you didn’t add oil and let the skin render down, looks perfect. This is an awesome meal for a busy weeknight. Yay!

      Thanks Annette, I'm not a fan of rubbery skin, so if i'm going to us it, it either needs to be braised long enough for the collagen to break down or fried until it's crisp. Making it oil/baste itself while getting the crisp skin is a great time/ingredient saving hack.

    I made this dish tonight, and it was a hit. Just thought maybe next time I could use Japanese pre-made curry roux blocks to marinate when I'm feeling really lazy.

    I love the idea of a sauce with a mango chutney base, and you can't beat chicken thigh for perfect flavour and moisture. What a great idea for a simple, tasty weeknight meal! Perfectly done!

      Thanks! This actually started as a 10 ingredient dish, but over the years I've been doing it (first had something similar in college at a restaurant), it's gotten whittled down to just mango chutney in the sauce. 😆

      @@NoRecipes wellmark I'm doing fantastic last week I was giving a case of mangoes and other than just eating the mangoes I wanted to do something special with and then you came on with your recipe I made my own like what's called a chimichurri sauce or can also be called a mango salsa sauce because it's made it spicy I made the chicken with the freshly made mango sauce and I got to tell you mark it came out fantastic it was so good I'll definitely be making this again and plus I have some mango salsa left over for the chips LOL 🤣😆 you take care of my brother I look forward to your next recipe as always your friend inside Nevada Nicholas

    This is like the food version of the meeting of the best of two worlds! Love the video. I do a lot of chicken grilling when I need some meaty comfort food, using a grilling pan for to minimise the contact of the chicken’s liquid with the chicken itself - to give that extract crunch! I shall try this too❤

      Getting the skin crispy is mostly about rendering out the fat in it and it helps to have some juices in the pan because it steams the skin first before the liquid evaporates and the fat starts to render. Hope you enjoy this!

      Hey Ron, sorry for the slow response. Yep any curry powder will work for this one! Calling them Chicken quarters makes perfect sense, especially how I've seen them cut in the US where it includes the spine. 👍🏼

    Another great recipe and demo,thanks again Chef San.Hint;soaking in bleach or Oxy Clean(US) for about 30 minutes removes turmeric(also annatto and saffron) stains.

      Thanks guys! This will definitely work on other proteins. I've done it with lamb chops, pork and tofu. If you go with tofu I usually us a bit more salt and let it drain for about 30 minutes before rubbing the garlic curry on both sides. Glad to hear you enjoyed the 🧄🍚!

      Thanks Larry! It's got tons of spice flavor but if you also want it spicy hot, you can add some chili flakes or cayenne pepper to the rub.

      The great thing about chutney is that it also includes spices and salt. Jam is going to be more one dimensional, but it could work if you added other ingredients to it.
