I'm from Egypt and I'm making a book about authentic food recipes. If I removed the bean sprouts from pat thai and replaced the chives with green onions and used the noodles you made but cut thinner, would it be an authentic pad thai recipe?
I hope this helps. Truly authentic pad thai is made with shrimp, firm tofu, bean sprouts, chives, sweet preserved radish, dry shrimp eggs and peanuts and the sauce only is made with tamarind, fish sauce and palm sugar. No oyster sauce. As for the noodles they use flat rice noodles but in thailand it's also common to see pad thai made with rice vermicelli noodles. They call it Pad Thai Woon Sen But you should cook it with what you have available because it's difficult to find some ingredients in some places. I for example can't find half of the ingredients so I have to adapt.
I just made this for iftaar not sure how it will taste. I have omitted the tofu but added alot of chicken and tandoori masala. I don't if I had the right measurements for the thai sauce I am praying that it turns all right. Wish me luck 😂

Your noodles should be wayyyy darker not enough sauce. Probably good for people that don’t use seasoning though.
