Glad to see this one turned out well for you. This was my first experience with any of Pepe’s or September’s coffees and I was unfortunately very disappointed. Shockingly vegetal and lacking sweetness for me on nearly every brew. If this one comes up again I’ll have to give it another shot with some lower water temps.
Your experience does not surprise me in the slightest. Our first experience with a Pepe coffee was perplexing to say the least. It's a very tricky coffee to work with but has a high payoff if don't correctly. Actually had a conversation with Kyle about this coffee and he said that the best success people have is with lower extractions. Really appreciate the feedback though as this seems in-line with the downside of this coffee
