This may not be why, but check your fire codes. If they made the extra bathroom with that short wall, it's probably because the fire codes for that house don't allow for a full wall. I had that exact issue in a previous place. We had to leave like a 2 or 3 foot gap between the ceiling and top of the wall
Easiest way to fix the gap between the mantle sides and the wall is to shim it with a thin piece of wood. Judging from the image that I saw a piece of wood about the thickness of a fence picket readily available at home Depot or Lowe's would approximately be the correct thickness or You can add a thick piece of quarter round depending on your desired look.

Shame your replacing the fireplace tile. Think it might have been original. That's not a 'fake' wall, it's a 'knee' or 'pony' wall. I'd consider reusing some of the cabinets by stacking them over the others. Another possibility for the kitchen, just move the cabinets up to the ceiling and put open shelving beneath. Cabinets keep things clean and can protect things from rodent contact if you get an incidental infestation. While you dislike the 'weird tile shelf in the bath, you may want to reconsider removing it if it is part of an outside wall and it gets cold in your area. Please recycle the trim, cabinets etc, d o not throw them away. Think the carpeting in 'the brick room' is the first thing to address and removing it will give you inspiration. Do agree with going lighter in the palette. Like the idea of the pink bath. Agree with your moving the washer/dryer out of that area of the kitchen. Maybe orient it into the hall by the bath?

Omg girl I moved out to Louisville from dallas for my bf lol. They have a lot of old homes here.. my home was built in 1901.. and is a Sears Catalogue home. It was also featured in a 1905 catalogue as its front cover. Had a lotttt of its originals left as the door, fire place, tinned ceilings with beautiful designs, checkered kitchen floors, iron face fireplace, everything!! And bought it for under 100k!!! Back in 2012 no rennovation needed!! KY homes is hella cheap you did a great job.
Consider keeping the pony wall! That space above the wall makes your heating/cooling more efficient.
