Chocolate Crepe Cake
Chocolate Mille Crepe cake with whipped chocolate ganache cream
Chocolate crepes
3 Eggs
Sugar 1/4 cup (50 g)
Pinch of salt
Milk 1/2 cup (120 g) +1 cup (240 g)
All-purpose flour 1 cup (130 g)
Cocoa powder (unsweetened) 2 tbsp (12 g)
Melted butter 1/4 cup (55g)
Chocolate cream (whipped chocolate ganache)
Dark chocolate 85 g (3 oz)
Heavy cream 1/3 cup (80 g)
Heavy cream 1 2/3 cups (400 g)
Sugar 3 tbsp (38 g)
PLEASE READ
-All-purpose flour can be replaced with cake flour
-Heavy cream can be replaced with fresh cream or whipping cream (35 % fat)
-I used 15 cm mould to trim the edges (6 inches)
-Refrigerate at least 4 hours before serving
