    Sabudana kheer is a milk based creamy dessert from the Indian cuisine, and is most commonly prepared during fasting days. Sabudana is also known as tapioca pearls and is made of starch from the cassava plant. This is considered right for consumption during vrat (fast).
    Sabudana needs to be treated properly so that the kheer turns out to be creamy rather than something that got thickened by starch.Thickening using a starch may be a great option for many dishes but definitely not for kheer! Kheer is suppoed to be creamy, rich and flavorful. If you have worked with cornstarch earlier then you would just know what I mean!

    Milk 1.25 liter
    Sago seeds (sabudana) 1 cup/170 g
    Sugar ( 6 tablespoon)
    Water (1/3 cup)
    Saffron threads (kesar) (8-10 threads)
    Cardamom powder (1/5 teaspoon)
    Dry fruit for garnishing
