The Eco switch doesn't have so much to do with fuel economy. It's main benefit is to smooth out the throttle response when it's bumpy or for rock crawling. Since it's a fly-by-wire throttle and not a throttle cable, the Eco switch clips the peaks when your foot bounces on and off the throttle, as well as giving a less aggressive, more linear throttle response. Also, when in low gear, the Eco switch is automatically activated and limits the throttle opening to only 41%.
