    Finding ghee pure enough to use for sacred purposes is a problem these days for devout Hindus, since many large-scale producers add salt to their product.

    To get the grainy texture, sprinkle a few drops of water or add some salt after you cut down on the heat and remove from the stove to cool down. Otherwise, the liquid will rise up and spill all over!

    Madam, thanks for the perfectly explained video! As soon as I saw it, I was so impressed and set out myself to make ghee from 500gm, Neelgiri's unsalted butter. Ghee came out so well - in colour as well as fragrance. However, I have these small doubts: 1. Instead of using the vessel with handle and swirling the vessel continuously, what about stirring with steel ladle continuously? That is what I did - used thick steel vessel and ladle - yet it came out well. 2. Some say strain the ghee with cloth..... etc. is it necessary? I poured the ghee to another container without any strainer and leaving the residue behind. 3. Ghee did not solidify even after 10 hours. Was there anything wrong in the way I did or is it because temperature here is about 30 degree? Later on I put the ghee inside the refrigerator. In few hours, it was solidified and yellow. 4. Can sprinkling water at the end can spoil the ghee if we want to use it for longer duration?

    This was interesting and well presented...but I was somewhat taken aback when you put water in the ghee at the end to control the temperature. We just spent 20 minutes getting rid of the water. Is this really a smart move? I'm sure you have experience, but a small explanation would be appreciated.

      For clarified butter taking of the white top to have only clear butter is necessary.
      For ghee after 10 to 15 minutes most of the white should have sinked down to the bottom due to the lack of water (so do not insert water at all) and when that white starts to become very light brown, it's done. The ghee will look like honey.

    • @user-hq116
      @user-hq116 4 роки тому +1

      Cutting into cubes increases surface area and melts evenly otherwise uneven melting could result parts of the ghee getting burnt before all of the butter melts. Usually ends up in loosing flavor or undesired outcome.

    • @user-hq116
      @user-hq116 4 роки тому +1

      Also reduces cooking time as @Anna Smith has said, but not worth it having a risk of uneven cooking resulting in a disaster.

    Adding water is going to spoil the ghee if u want to store it for longer..if making it just for few days then fine

    • @PremaKitchen
      @PremaKitchen  4 роки тому

      Hi Sweta, thanks for watching. Few drops of water is not going affect the ghee flavour but it would give the ghee its grainy texture. And also the few drops is going stop the cooking process further and would evaporate with the heat. Filter it, throw the brown residue in the sieve, the liquid is ghee

    • @user-hq116
      @user-hq116 4 роки тому

      Thanks Shilpa ji, it has to be filtered with cheese cloth and the residue can be discarded. The clear ghee can be stored in a clean air tight bottle.

      Did you stall over cooking by sprinkling a few drops of water? I think some are missing key points here. Hope you don't ignore any steps stated and you should achieve the best results. There are a couple of comments from viewers that have got the grainy texture so please go over again I think.
