Ahh the Sonic and Knuckles show I remember when the first episode came out and how hype it was just having the show exist after waiting for about 2 months its just amazing.
More recently, Sonic Paradox rehosted HD versions of a bunch of classics from other creators. My personal favorite, outside of the ones produced for Sonic Paradox itself, is definitely Sonic Switched by Comick.
Graphy also made a 3D adaptation of this comic dub about how sonic prime season 3 would start and the animation is really good. In fact, it looks exactly like how the show does.
Nazo Unleashed is easily one of the best fan products to come out of Sonic, sure some of it hasn’t aged very well and you can tell it was first made by a teenager but gosh dang is it awesome. Wish Wrath of Nazo could’ve been finished but things happen

The one's I remember disappearing were Sonic Adventure, Shadow in brief and Sonic Unleashed in brief. Also Summer of Sonic is a fan event, not official lol.

There is one animator you didn't mention or no one talks about is "JeddenzeFox" is extremely underrated because he's animations focus on the characters and how they should react to other videos. For example: Sonic on SMASH or PASS: Sonic Characters where Sonic only smash different versions of himself and a chilidog Sonic.exe Plays Vs. Sonic.Exe (Friday Night Funkin' SONIC.EXE MOD) where he smash the keyboard and I found it really funny or TAILS?! Sonic Plays The Henry Stickmin Collection #3 (my personal favorite) where Sonic mentions his old games for Easter eggs and choosing Tails as an option (I found that really sweet)
