Good morning, I have done something very similar to this. However, instead of melting the cheese in a skillet, I put it on a parchment paper lined baking sheet and left it in at 350 until it is a melted and beginning to turn golden brown. It crisps up that way and then once it is topped and put back in to melt the topping cheese you can cut it and eat it just like a pizza with a crisp crust. Yours looks just as delicious and I will certain give your way a try!

Cool, I know my grand's would love this. They will eat bread sticks but usually eat the toppings off the pizza crust.
