- Ingredients:
300 g melted biscuits
5 tablespoons of milk
180 g butter or margarine White layer:
1 pack of Ella cream cheese (450 g)
1 cream fix
1 packet of vanilla sugar
50 ml water
1 gelatin (10 g)
500 ml plant-based whipping cream
220 g powdered sugar Fruit layer:
450 g red fruit mix
100 ml water
1 gelatin (10 g)
50 ml water for gelatin
4 tablespoons sugar
Preparation:
Cook the fruit with water and sugar for about 10 minutes. Let one gelatin bloom in water for 10 minutes, then melt it (it must not boil) and add it to the fruit mixture that you have removed from the heat. Set aside to cool.
Melt the butter or margarine and mix with crushed biscuits and milk using a mixer. The mixture will be quite crumbly, so press it evenly into mold using your fingers. Whip the plant-based cream and add the cream fix. Then, add the cream cheese, vanilla sugar, and powdered sugar to the mixture. Let the gelatin bloom for about 10 minutes, then heat it just enough to melt (it should not boil). Mix it with a small amount of the white layer, and then add it to the rest of the white filling, mixing everything again. Press the white layer into the glasses over the biscuit base.
Once the fruit mixture has cooled, gently spread it over the white layer.
Let the cheesecake sit in the fridge for a few hours to set.
