Interesting. I'm Filipino and we build houses out of nipa palm, but never have I thought the fruit would be edible. That or being in a region where we eat spicy food everyday, we didn't necessarily need to eat the nipa palm. It's as much a revelation to me as when I realized we can eat coconut shoots like bamboo shoots!

I know ! We missed out on a lot of food sources tho it is all around us in bountiful amounts . I believe it is because we are separated from the Asian continent , we " didn't get the word". Raised in a rural area , my mother continously pregnant , my father unendingly gambling , HUNGER is a constant presence . Looking back , with knowledge of other food cultures , my grief and fury at how needless it all were. My parents and neighbors' ignorance, laziness , lack of initiative , lack of love for the children ( physically , verbally abusive ), lack of curiosity, lack of adventure --reasons I attribute to slow progress . We had such fertile soil yet everybody in our barrio had NO GARDEN ! As children we didn't know better. Dishes cooked are caveman style - boil water, salt it , drop the fish - done! Yet lemongrass , ginger , tamarind etc abounds . Nipa were all around, only used for roofing. Coconuts all around. I'm still amazed I've come a long way. I know an elderly couple who came to USA . We cooked our favorite dishes. Bought a coconut , manong did not know how to break it , manang poured a lot of water to a stir fry dish, para meron tayong sabaw. So we will have soup, she said . Maybe we've learned to do better culinary wise but my relatives still snob curry , chilis and they pour condensed milk unto spaghetti. Pizza dough is full of sugar.
I have never seen such a plant in my life... so I wanted to learn more about it. I went to the wikipedia page for it and without recapping the whole page this is truly an amazing plant capable of providing food and carbon neutral fuel in the most marginal of environments. the nipah palm is very commonly found in the tropical swamps not only in southern Thailand but also Malaysia, mekong delta in vietnam, the carribean and central america. its seeds containing the jelly-like texture are edible and thus suitable in making desserts including ais kacang in Malaysia. however, the fruit must be in the middle age as the seeds get harder as they age. the roof made from durable leaves is called attap. the sap is also used to make a non-alcoholic drink called 'air nira' in Malaysia as well as toddy, the palm wine. i have never seen a very young nipah fruit used in making curries as in this video and thus it is very unique! the toy made from weaved young leaves given to Micah reminds me of the leaf weaving crafts done by the Mah Meri tribes at Carey Island in Malaysia, belonging to the aboriginal Senoi group. Of course, the syrup tastes a bit salty since it is grown close to the river estuary.

Mark good to know that you featured this type of food (natively known), that found only in some remote areas like this and i'm grateful what you have featured.
With this, i am highly recommended to go to our place in the Philippines particularly in Mindanao, Agusan Del Norte (Butuan City). Where you can feature some of our delicacies. We also have Sago trees that plenty of snack food could be made. And a lot more.

@@DuongThanhTung vn có đường thốt nốt đó thôi. Chứ dừa nước khó lấy mật hơn thốt nốt nhiều, do nước lên nước xuống. Thời bao cấp thiếu thốn do nhà nước ngăn sông cấm chợ, k sản xuất, giao thương được. Mình người nam, ngày nhỏ vẫn ăn đường thẻ, đường thốt nốt. Bây giờ bắt đầu quay lại với các loại đường truyền thống thay vì đường trắng tinh luyện đây.
