Sourdough Bread
.
M▪️390g (or ~3 Cups) Artisan Bread Flour or All Purpose Flour▪️2 tsp Sugar▪️1+1/2 tsp Salt▪️3/4 tsp Instant or Active Dried Yeast▪️300ml (1+1/4 Cups) Water
.
In a large bowl mix together the flour, salt, sugar and yeast
Add some lukewarm water (~95°F) and mix everything together to form a shaggy mass of dough
Cover the bowl with plastic wrap and let sit and rise in a warm environment for about 2 hours
After 2 hours, preheat the oven to 450°F with a Dutch oven inside (so the Dutch oven gets preheated as well)
Transfer the dough on to a floured work surface (the dough will be sticky so dust it with some flour whenever needed); knead the dough (fold it on to itself, turn, and repeat) for 2-3 mins until a tensive dough ball forms
Transfer to a proofing basket or parchment lined bowl, cover and let rise for 35 mins or until the dough doubles in size
Place the dough ball in the preheated Dutch oven lined with parchment and bake at 450°F for 30 minutes; reduce the oven temperature to 400°F, remove the lid, and bake for another 10-15 more minutes (at this point the longer you bake the bread the crispier the crust will be.. just make sure the bottom doesn't burn)

Note: If you are making bread on a regular baking tray instead of a Dutch oven, steam is the key factor for making crusty bread. Place a pan with hot water in the lowest rack of oven while baking and spraying with water inside the oven during the initial five minutes of baking to help create this steamy environment inside the oven.
🎃mSpicy Butternut squash soup with coconut milk and apple brie grilled cheese
Ingredients:
* 1 medium-sized butternut squash or any squash of your choice.
* 1/2 can of full-fat coconut milk
* 2 shallots
* 1 garlic head
* 2 Thai chili peppers(optional)
* 1 tsp fresh ginger, grated
* 1 1/2 cup of vegetable broth or chicken broth( or more, depends on desired thickness)
* oil to drizzle vegetables
* 2 tsp turmeric powder
* 2 tsp paprika
* S & P to taste
* Fresh parsley, for garnish
* For grilled cheese (2 slices of sourdough, 2 sage leaves, thin apple slices, butter)
Instructions:
1. Preheat oven to 380F
2. Prepare all listed vegetables and place on the baking dish.
3. Add seasonings and olive oil
4. Bake for 45 min, until vegetables are golden and soft inside.
5. Place everything in a pot , add coconut milk and broth. And blend with blender.
6. Adjust seasonings to taste.
7. For grilled cheese:
* Slice sourdough, sage, brie and apple slices.
* Assemble, add butter and melt on the griddle or pan until golden brown and cheese melted.

So, I am going to serve the soup and meatball sandwiches for lunch. I'm going to try the soup that you made in your vlog, perhaps on Saturday . I have little seasonal gifts that I am going to leave on each place setting each day. One is for Halloween, one for Thanksgiving, and one for Christmas . Great video! Love the sweater! Please Say a prayer for Israel, my sister Lisa and her church group. They are in Israel. Things are changing constantly. I hope they get out safely soon. She is at peace and strangely we are too, but it’s getting real friend. They are in Jerusalem and had 2 missiles intercepted by Israel this morning. They was sent to the bomb shelter shortly after that. God’s peace is amazing how he gives you peace in the middle of chaos. It surpasses all understanding. Good morning. Catching up. I love, love, love sourdough bread but honestly I just can't start baking it because I could seriously eat an entire loaf by myself. Those grilled cheese sandwiches looked amazing. :) I have both of those perfumes that you showed and you were smart to get the smaller travel sizes. I find that Aldi & Trader Joe's carry similar items...they say they are not owned by the same company but there sure are similarities. Dying to know what you think of the pumpkin sauce. My goodness, I think I gained 5 lbs just watching the intro! haha Love all the fall foods! I LOVE anything pumpkin.. and have been looking for those maple leaf cream filled cookies to no avail. I wait all year to dunk them in my coffee! Love your pumpkin casseroles on your stove. I do love bringing out all my copper and fall plates and dishes. Its such a fun , festive change. Wow... your bread looks like it came from a fine bakery!!!! Kudos!!! And is there anything better than smelling baked bread and roasted fall vegetables? I make a similar grilled cheese with fig jam for a touch of sweetness. Watching you eat the soup had my mouth watering! Love the pumpkin fall sweater... but being 5 foot.. it looks like it would be way to long on me...darn it!

Love the sweater your wearing. What color is the solid color? wish I loved squash and to make soup not a fan but I will try my hand at the sour dough do you think it would bake okay in a Bread machine? I don't have a dutch oven been wanting to buy one. Are the over sized sweaters true to size?
The color is rust orange! I got it in the size medium, and there was still plenty of room! As far as the bread, I have never used a bread machine, I'd say give it a try!
It's cold enough for a fire there? We just got our first cold front and we're enjoying it so much. We are currently sitting inside with the back door open enjoying the cooler temps. We would love to have an outside fire but we are under a fire ban due to the drought.
