Sounds great! I did a similar-ish thing last year with my Suffolk bikepacking trip finishing in Lowestoft and going through Southwold etc, definitely more to explore round there!
Love these videos an def made us want to get to Norfolk on our own bikes. Quick question : why don’t you use old style panniers with the weight low rather than having it all up top? Does it make for tiring steering?
Glad to hear you're enjoying and yes highly recommend Norfolk! Combination of factors - that bikepacking bags are universal (not needing mounting points) so can go on any bike, are lighter, don't take up as much width so easier to transport on trains / through narrow gaps - all comes down to personal preference though ultimately!
