    There is so much I appreciate about this channel: simple, healthy, and budget friendly. After a life time of eating meat, I find I rarely want it in my senior years. So this is perfect. I saw last week that another longitudinal study says the Mediterranean diet is, indeed, the healthiest. I don't eat much anymore, live alone, so this is perfect. I don't have sweet potatoes, but garnet yams. Hopefully it will still taste as good as it looks in the video. Thank you!

    I am recovering from stomach surgery. I could not have eaten this dish before surgery (no onions, garlic, peppers.) Right now I’m on a clear liquid diet and thinking about when, in a few months, I hope i can make and enjoy this dish!

    I followed this recipe tonight and made the most glorious dish for our evening meal. Because of the discussion of the socarrat in the previous recipe, I had time to let the vegetable at the bottom of the pan cook to their best caramalized state. Absolutely fabulous. My 9-inch pan was too small to put an entire kilo of sweet potato into the pan, so I'll use the other sweet potato when I repeat this recipe next week. I'm such a fan of Spain on a Fork.

    Very nice with our seared tuna. We just added some smoked Spanish paprika and some hot chilli because, well that's how we roll. Definitely a repeat.

    amazing recipes always. i love that these dishes are usually quick but still delicious and all from fresh. are your videos sometimes filmed in both spain and the usa (some of the ingredients/cans make me think both??). thumbs up.

    I love that many recipes are vegetarian. Proves you don't need meat at every meal like in the U.S. People here could learn a thing or two from other countries. Ever wonder why strokes, heart disease and others are so prevalent here?

    I also wondered about the garlic until I saw Albert pop one into his mouth. Is there any that we could remove the cloves from the recipe and use them to make a paste to mix into the dish? Keep these recipes coming.

    I always leave the skin on white potatoes but peel sweet potatoes. Now you’ve got me questioning myself 🤔..😂

    Albert, fan from India 🇮🇳 we hv a different kinda sweet potatoes here, skin slightly thick. Is it ok to parboil them and then add to fry pan ? Does it change texture or taste ?

    This is not one of Spain's most classic dishes, in fact I've never heard of it. This guy has been making videos about supposedly traditional Spanish dishes, and I have yet to see any that are actual Spanish food.

    I love mine with sazon goya, lots of garlic, salt, pepper and lot's of butter with a pinch of sugar in the raw.
