I am doing the exact same project in northern Illinois. Make sure the walls are plumb I am adding studs 16” OC DO NOT MISS RUNNING ELECTIC IN THE WALLS NOW!!
Great idea converting the old barn into a shop, when i was living in Bruderhiem, i did something similar to my old garage, i did the sistering method on my garage, worked well enough. I'm currently looking at land in Southern Alberta, in Whiskey Gap atm, will be building a shouse/ house & garage eventually. Great job so far
I just purchased this property also in southern Alberta. I should have a functional shop for fractions of the cost of building new. The land has another decent sized shop too. But this one is huge.

Ply wood inside put a coat of paint on and it will give more strength to building

Spray foam it seals everything and is fast and mice don't like it and they don't get behind it
I’m considering spray foam. But it will cost me $15000 instead of $5000 if I get it sprayfoamed.
