How to Store Oatmeal in Mason Jars with Vacuum Sealer

  • Like a lot of my dried goods, I store oatmeal in mason jars using a vacuum sealer. Any FoodSaver or other brand of vacuum sealer that has an accessory port on it can be used with the mason jar attachment. You can get the mason jar attachment in regular or wide mouth. Sealing in a mason jar eliminates the need for oxygen absorbers, and allows you to safely store dried foods for many, many years.

    Freezing is easy to do and if it makes you feel better go for it, but no bug or bug egg will survive being in a vacuum. If you don’t have a way to freeze first, don’t worry about it.

    My Food Saver didn't come with an accessory hose so I bought one on Amazon. It didn't work. What I didn't realize is that the accessory port on the Food Saver is color coded. The end of the accessory hose must match the same color (grey or green). Once I bought the correct accessory hose, sealing a jar was just as easy as in this video. Thanks for the demo.

    I like the glass canning jars for storing vacuum sealed dry foods than the #10 cans. I used to buy #10 cans of oats from the LDS Church already canned. The Church used to use baked enamel lined cans but no longer do. There now is a health warning when you purchase #10 canned foods.

    When I eat oats (rolled oats), I either make overnight/refrigerator oats, or let them soak longer to ferment them as you would when making a sourdough starter. I wonder if oats stored long term would be ok for this? If there are germs/botulism it would require cooking, which is not compatible for this purpose.

    • @oldtimerlee8820
      @oldtimerlee8820 4 роки тому +3

      The bacteria (Clostridium botulinum) spores need a moist environment* to multiply and produce the botulism toxin. In addition to moisture they need a low oxygen environment, as well. Thus, properly dry oatmeal in a vac sealed jar doesn't have the moisture needed. When you remove the oatmeal from the sealed jar to soak or ferment you remove it from the low oxygen environment. Thus, without either the moisture or low oxygen, the toxin won't be created, which in turn, means that cooking to destroy toxin isn't needed.
      *All 4 favorable factors have to be in place at the same time -- temperature, pH, moisture and low oxygen.

    • @GreatLakesPrepping
      @GreatLakesPrepping  4 роки тому +9

      You can reseal it, but generally I'd go through the rest of that jar long before I'd worry about it going bad. Think about that cardboard cylinder of Quaker Oats in your cupboard. That could sit there for months before you go through it all, and it's generally fine. I seal things in jars to keep them good for years or decades.

    Help! I watched a video that said to never can raisins, chocolate, dried fruit like trail mix, cookies with 02 absorbers as it can cause botulism. I just canned 40 jars this week because another YT video said it was okay! What should I do? Remove the O2 absorber, start over and dry can or use a vacuum sealer? Thanks!

    • @GreatLakesPrepping
      @GreatLakesPrepping  5 років тому +6

      Dry canning with O2 absorbers or vacuum-sealing are effectively doing the same thing. In both cases you're removing oxygen. A vacuum-sealer sucks out all of the air, including oxygen. O2 absorbers absorb oxygen, but there is still "air" in the container otherwise. That doesn't really matter though.
      In other words, if something isn't safe to dry can with one method, it's not safe to dry can it with any other method. I've dry-canned certain dehydrated fruits. But anything with fats like cookies is probably not going to store properly because the fats can go rancid after awhile. As for raisins and chocolate, I don't know much about that. I've got lots of M&Ms dry-canned, but I'm not sure if that's different because they're sealed in hard candy.
      Keep in mind that most youtubers and preppers are not "experts". We just know the things we've tried that haven't killed us. Some people say it's ok to pressure can butter and milk. Other people will tell you it'll kill you. As for me, I try to adhere to the official USDA information regarding food canning safety as closely as possible.

      I'm not sure why you're having this issue. A couple tips that could possibly help:
      -Make sure there's no oat dust or anything on the edge of the glass jar's rim, that could obstruct a good seal.
      -Be sure to remove air hose from jar attachment before attempting to remove from jar.
      Honestly, I've sealed hundreds of jars with this method with no issue. Is it possible that you got a damaged or defective attachment?

    We have 10 birds, so we buy in bulk when we can to save money. But I found out that freezing whole sunflower seeds does not kill the little worms that can be in the shell. They come back to life and turn into small moths. I think they call them Indian moths. If you don't somehow kill them in time, they hatch in the bird seed and then end up with moths in the pantry and flying all over the house. Used to drive us nuts until we stopped the cycle. This time we vacuum sealed the seeds in jars. I hope this will kill the dang bugs. I will have to wait and see if sealing the seeds will stop bugs growing in the bird seed. For now, we keep their seed in the frig. All the time. That does work. Thanks for your nice video. I will be looking for more from you.

  • @Sketcher93
    @Sketcher93 4 роки тому +2

    We don't avoid the rings or bandsbecause of the moisture. I've never heard that anyway. The reason we avoid the band is because if the seal is bad the band will keep it in place and you might not notice the seal has failed. You want to know about it if the seal fails so you can reseal it. In my experience about 1% of a huge batch of jars actually do need to be resealed. Otherwise, right on! I hope people can see how easy it is to preserve food.throwing away food because it got rancid or old tasting is such a waste and unnecessary nowadays. I think every home should have a food sealer. • @GreatLakesPrepping

      For sure. False seals are definitely a reason not to store with the rings on. But there can also be problems with rusting. Those rings are prone to surface rust, and it can cause the ring to get stuck on the jar, or even cause damage to the lid.

    I have tried to order a vacuum sealer accessory for my food saver… But it never works! The access report is too fat and the tube part with the knob on the top that is supposed to go into my port, doesn’t work. It’s just too small of a accessory for the opening on my food saver.

    • @GreatLakesPrepping
      @GreatLakesPrepping  3 роки тому

      Hello. There are different sizes of accessory hose. Many vacuum sealers have color-coded accessory ports. For instance, if it's green, you have to be sure to get the green tipped accessory hose.

    Can you reuse those lids since you aren't sealing them in hot water?

    • @GreatLakesPrepping
      @GreatLakesPrepping  8 місяців тому +1

      The short answer is yes. I will use the same lid and re-seal a jar repeatedly as I use its contents. I could probably continue re-using it for a lot longer, but I tend to discard them after a jar is empty just to be extra safe for my stuff that might sit on the shelf for years.
      I'll also mention that I've begun using cheapo knockoff lids from Amazon for dry-sealing. While I don't trust them for wet/heat sealing, they've been working perfectly well for vacuum sealing like this. That definitely makes it more affordable to not re-use the lids forever.

    • @GreatLakesPrepping
      @GreatLakesPrepping  2 роки тому

      @@NeanderthalDogma Storing in mylar bags is fine, but I'd personally be worried that you saw condensation. Just leaving the bags open for awhile doesn't guarantee that any moisture at the bottom will be gone. You may want to spread all your oats on a cookie sheet and really let it dry.
      Regarding botulism, no, simply cooking it won't kill it. Not only would your food be riddled with it and be generally disgusting, regular heating doesn't kill it. That's why it's so serious, and that's why pressure-canning is required for low acid wet foods (because pressure can create heat higher than that of simple boiling).
      Next time you freeze oats or any other dried goods, I advise putting them in an air-tight container before freezing, and then letting them come completely back to room temp before opening that sealed container.

    Do you use oxygen absorbers for any of hour canned dried goods

    • @GreatLakesPrepping
      @GreatLakesPrepping  2 роки тому +2

      Hi Tracy. When dry canning with a vacuum sealer, I don't. It's honestly a waste of oxygen absorbers. This method eliminates the need for them, as it works better for removing all air (including oxygen). If I'm dry-canning something like flour or other powders, I'll do it with oxy absorbers instead, because the fine particles sometimes get sucked up by the suction and can get between the lid and jar (leading to a bad seal). But for anything that isn't a fine powder, I use the vacuum sealer with no oxy abosrbers. It works great, and I still open jars that I sealed many years ago and the contents are in perfect condition.

    • @GreatLakesPrepping

      Definitely not. Vacuum sealing can only be used for 100% dry goods. Anything "wet" still needs to be heat canned (hot water bath or pressure canned). For wet stuff, the heat is needed to kill bacteria.

    • @GreatLakesPrepping
      @GreatLakesPrepping  5 років тому +4

      Jars and lids are always washed, but I don't sterilize with steam or boiling water before using them for this. When I'm putting dried foods in them, it's not required like it is when hot water bath or pressure canning liquids.

    • @oldtimerlee8820
      @oldtimerlee8820 4 роки тому +3

      When canning the only time jars and lids need to be sterilized is when waterbath canning and the processing time is less than 10 minutes. When putting dry foods in clean jars, there isn't enough moisture for microorganisms to grow. When waterbath canning, processing for more than 10 minutes is equivalent to sterilizing the the lids, jars and contents of the jars at the same time. Pressure canning automatically sterilizes jars and contents.

      @@ConfedVet I only use oxy absorbers for things that don't work well with a vacuum sealer. For instance, flour. A tiny bit of flour dust often gets sucked upwards and settles between the jar and the lid, which makes the seal fail. So, for powders I'll use oxy absorbers. The only other time I use them is for non-jar containers, like mylar bags. 95% of my dry stuff is vacuum-sealed in jars. Rice, beans, oats, dehydrated veg, pasta, etc.
