I was skeptical when I tried this recipe with my husband who hates eggplant. Now this is one of the favorite dishes in our family. Thank you for sharing such a wonderful recipe.

I generally add very finely chopped onions and 2 garlic pods to the above stuffing ingredients, and stuff eggplants with a dry mixture. Will definitely try this version. Looks amazing!

This Vangi recipe was really easy & quick. I always thought that there's a lot of onion-garlic going into it. However, I did not see you using any Onion or Garlic in here. We Bengalis do not prefer much of onion-garlic with veg dishes. So this suits me well :) During my time in Nagpur (4 yrs of Engineering), I always loved Vareli Vangi and had enjoyed it in all the functions I was invited, like a mandatory thing. I always used to think Vareli Vangi is a Rocket Science. But you made it look really easy and quick. Thank you! This is definitely up for dinner tonight.

Wow..Great looking dish...! Mouthwatering! I'm from Karnataka and we make a variation of the same dish here as well. You didn't add extra salt in the dish after what you added initially to the masala-mix. Doesn't it require more salt than what you added first?

We generally prepare the same way in andhra pradesh n name it as guthhi vankaya n extra added was ghoda masala ... but it's rich color is mouth watering ...

Since you would be showing Maharashtrian cuisine in this channel it would be good if you also give some information of the spice or mix that goes in the recipe because for non-Maharashtrian states those would sound like jargons. I mean if you read the comments below, maximum viewers have asked what is Goda Masala. You see what I mean.
