This looks amazing. And I so wanted to make it, unfortunately the average kitchen does not have those fresh herbs, nor did I have 10 lbs of mushrooms handy :(
You don’t need all of that, you can still use garlic, onion and what other veggies you have around carrots etc. you don’t need to make it exactly how he made it.
If you improvise and do it your own way you can claim the recipe as your own as well and just use this video as a guideline on how to make it.
There’s also loads of other videos that can show you how to make a basic red wine jus.

That's exactly how I cook.
I usually try several recipes, then take the bits of each that I like and add my own personality to it. Food should be how you like it, inspired by others and using certain techniques.

What kind wine your use for
out of interest what red and white wines do you use when you cook, does grape make a noticeable difference, and price etc? liking the vids
Thanks Oli! - The rule of thumb is to use the same wine you would personally enjoy drinking, so grape variety, region etc is up to you. That said, you are cooking it, and completely changing the flavour so I would go with your cheapest favourite wine 😂
Hi Aaron, why no beef trim for the base of the sauce?
The bones were used in the stock pad you can always pour in any cooking juices from the meat too! 🙌🏼
