Why would she lie? If she doesn't want to tell him, all she has to do is say she's not comfortable with that level of openness, and in their line of work and situation, that would be completely natural. The scene only makes _sense_ if she's telling the truth, otherwise it's pointless.
The only reason she was able to open up to Shaw was because of Chuck’s influence on her as a person. He showed her how to be open and vulnerable and she’s changing/changed because of it. In simple terms it’s like Chuck has been twisting the bottle cap (Sarah’s emotions) for years, now that it’s loosened, all Shaw has to do is open it. At least that’s how I see it, it made me a bit angry as well but I don’t think it insinuates anything to do with Sarah liking Shaw more.
At first this scene really pissed me off. Then I calmed myself and realized that as much as she wanted Chuck she was still a spy and remembered her primary goal was to protect him. She was becoming a real woman as Chuck was becoming a spy, like her but she is still human and had to share her feelings with someone she had no real connection to. Exactly. What happened with that is that some fans hated this scene _so much_ that they hounded the producers until one of them finally claimed it was a lie just to get some peace. Same thing happened with Gene Roddenberry, fans who wanted Kirk and Spock to have been lovers kept nagging him so long he finally threw up his hands and pretended it was so. But the scene just doesn't make any sense unless she's telling the truth.

Her father still goes by Jack Burton in season 4, so that might actually be his real name. Maybe Sarah's real name is Samantha Lisa Burton??
