I just saw a mayo video whereby they used 2 T of brine from a ferment (sauerkraut, kombucha, or whey etc) in the ingredients. Once blending is complete the jar is covered and left on the counter to ferment for 6-10 hours then refrigerated. For reference, this recipe used 1 1/4 c. of oil, 1 whole egg, 2 t. lemon juice, 1/2 t. salt and 1 t. mustard. Herbs or a chopped garlic clove are optional. Apparently this lasts in the fridge for up to 2 months!
To clarify, that's one and one quarter cup of oil or 12 ounces. I love homemade mayo but don't make it often as I don't use it up in a week and end up wasting it, so I'm looking forward to trying this. I prefer using the immersion blender as it's so easy!
My grandmother (who's father was German) loved nothing more than eating her homemade mayonnaise with carrots sticks, while relaxing. I love your beautiful channel. I plan to make some soon. Thank you!

Hi Anja! I actually just made some mayonnaise last night. I make mine with a stick blender. Homemade mayonnaise is the best!! I'll have to try your recipe, I'm sure it's delicious like all of your recipes. ❤️
I like using an immersion blender for mayo. It's done in like 15 seconds and it's just like the stuff you get at the store. Never needed to worry about room temperature or anything like that.

Hi Anja, I made it! I know.....baby steps. I think you are right about using olive oil, which I did. Even though I used a very good mild EVO, the taste was a little dominant. But, I used it to make your potato salad, and the finished product was very very nice. I love your channel.

I like making my own mayo as well. I was surprised to see that you use the whole egg. All the recipes I have seen use only the yoke. I like the idea of using the whole egg because I usually have to figure out what I’m going to make with the egg white. I’m going to try this, thank you.

I've always made mayo but used canola. Now that seed oils are inflammatory, I want to make it with avocado oil. I have made it once with olive oil, but the blitzing with the stick blender made it taste bitter. The oil was fine prior to that. I want to avoid that again. It looked good, but I threw it out.
@Our Gabled Home I ended up making it with macadamia oil (had it in the cupboard) and extra light olive oil. I'm happy to say it was a complete success. Next will be the avocado oil and light olive. I'm really happy to take the inflammatory oils out of my diet.

I always add a bit of olive oil but the majority is avocado oil for its neutral flavor ~ Anja

I tried making this recipe today EXACTLY as you said, but I used a hand blender instead....it came out like water....liquid😔
Did you let all the ingredients come to room temperature before mixing? Also, did you let the oil stream in slowly?
