For cutting onion, i believe cutting its connection from the root part is what makes it release those chemicals, so i always go vertically. Somebody also gave me the tip of keeping water inside my mouth while cutting, and i dont remember crying ever after that.
The view looks amazing. I hope it will be a fun time in vancouver.
