    I have just nominated you for a plain English speaking award for Texans with your descriptions of bad smelling yeast .... it’s so true I misread instructions 5 years ago and had a three arse smell round my full house I was forced to stop its ....     George, thank you for the shared wisdom. For the live steam or other I have one question besides 100 others.
    I am a rum guy and would like to know your experience in developing flavors from ferment to your run? Where do the odd flavors like leather and smoke come from between the yeast and ingredients?
    No interest in additions but how these may come to life in a batch. Thanks for any points you may cover.

    Looking forward to that Scotch Recipe. I've been using 9# of Golden Promise and 2 # of Heavy Peated barley. Have to add sugar since I'm still using an air still, but it's pretty tasty 😁 I've had 2 gallons in my oak barrel for 5 weeks and it's almost there ! Thanks George, HAPPY DISTILLING !!

Also made a few gallons mead with good to very good results so far (haven't had to dump any batches). Have you used or what are your thoughts on using DADY to brew beer?

    #happydistilling I soaked two (1L) barrels in water (started out as hot as I could get it from the faucet) it took almost 5 days for them to stop leaking. I also fast aged for 3 days before filling the barrels. Thanks George you a world of info.

    Happy Distillin - I dunno if this’d work for a barrel but when I buy a new pair of cloth shoes I rub a tea light candle on them, they go white and then I hit ‘‘em with the hairdryer and they become waterproof and change back to their original look. Might be a good trick to try on a dripping barrel, just run a tea light candle over the join and wave a hairdryer over it.

    hi george fairly new to your channel love the content tons of great info i have a pot still that i made from a 20 gal ss pot with a copper head pipe i love the process of making i have a question about the popcorn mash what would happen if you popped the corn before making the mash seems like it would release the starch a lot easier keep up the great work i have binge watched a lot of the older videos great info thanks

    oke a little question so you did proof it first till 40% then after you put it in barrel for x time, then when you get it out of the barrel it will be below 40%.

    Thanks Mr.Duncan, I had not given any thought to steralizing barrels. My line of thinking was the alcohol would do the work for me. #HAPPYDISTILLING

      Im wondering that without sterilizing are you running the risk of actually "creating" vinegar by potentially leaving bacteria in the barrel.
      You do have a point on the alcohol acting as a cleaning agent. 🤔

    Can you do a Wheat mash? I live in a farming community, and my colleague grows organic wheat. What you're doing is awesome!

      I think you have to do something special in the mash process to break down the protein so it doesn't gum up. My brother did a wheat beer and it was a pain in the neck.

    Hi mate. Dean here in Australia. I love you videos. I was recently gifted a lovely 5lt American Oak barrel.
    I have been informed to age the barrel with cheap dry sherry for 3-4 weeks prior to placing in my clean spirit. Can you please comment on the reason I've been recommended dry sherry?
    Following this period I can then fill with clean spirit and leave sit for 4-6wks ready to drink but I see you have used a wood chip soaked spirit rather than clean in your barrel. I presume this will combine and enhance flavours but I presume the clean spirit with provide a good flavour ??
    Also does the chip soaked spirit give you a faster result in the barrel and might it extend the life of the barrels usefulness?

    Hi George can I use a belt heater to keep my wash at a constant temperature. I do my fermenting in my basement which is a little cool around 62. I use it all the time when I do wine so I figured it should be ok for a corn/sugar wash. What do you think?

    Hi George, huge fan here. Quick question. I am aging purified beer in a 10G barrel outside. Not exposed to direct sunlight and under cover, however after a few cold days we have rainy hot days. This of course creates condensation on the outside the barrel and eventually moldy spots started appearing. I cannot find any info if this is bad or not. I know some distilleries and wineries age outside but I am not sure if the mold on the outside the barrel is bad (or may be good?!)? Any thoughts? I appreciate everything you do, keep up the great content coming.

    Getting ready to spirit run a Single Malt Whiskey. What proof do you recommend filling the barrel with? I am thinking 140p 2 weeks then cut to 125p. Am I on track.

    George have you tried to artificially heating and cooling the barrels to quicken the aging of the spirit.

      I really ask myself Why would I do that?
      To quicken the aging process that is already very short (just a few weeks) seems like pushing the limits of science a bit too far.

    Help please!!!!!! I have a question i have a 1 liter barrel with a spigot. If i turn the spigot nothing comes out, unless i remove the cork in the bung. Then the liquor flows from the spigot. Is that how it is supposed to be?

    Does it matter how long you leave it in the barrel? I followed the recipe on your George Washington Rye video, used oak chips for 4 days, then put it in a two litre barrel. After a week it already tastes really smooth but if I leave it in there a lot longer will it spoil the flavour?

      It will not spoil but it will evaporate over time. It's called the angel's share.

    George old barrels make good planters cut them in half and you get two you should make a few for Mrs. Duncan ( Happy Wife Happy Life) then you could make a stand and plant a different spice in each one = Really Happy Wife.

    George... question I just ordered a barrel online I noticed after receiving it that there is some kind on varnish all over the outside! I'm very concerned to use this barrel for anything other than decoration... also it smells like lacquer in the bung hole... thoughts?

      You have to be care about where you order on line most of the barrels with a finish have a liner inside and are no use to us check their return policy and order from the link I posted here.

    When adding water in the barrel and you stop the leak does the residual water dilute the spirit

      Adding hot water is a pre soak, to swell the barrel joints. After, when there are no leaks or dripping, then empty the barrel. Then add the spirits and cap.

    @ George! I have some questions. Do you proof before you oak and barrel it. Is there a certain proof to be at when you add oak? When do you finish (adding glycerine).

      I noticed Gorge proofing down in a previous video. I was wondering about that myself. Is it better to proof down then age or age and proof down. Does it matter and are there differences in the results?

      @@michaelnichols1977 I prefer to start at a high proof on the chips then proof down for the barrel so I don't dilute the flavor

      You can age until you have the desired taste/effect you are looking for. Or, until you're out, then just add some more. Your barrels char level, like time, determine taste characteristics as well.
