The thing I like best about Hercules Candy is that Steve shares so much information so you can try to make things yourself. So many people wouldn't do that so you'd have to buy their product. 🙂👍

I made Truffles one Christmas for my cousin ( a hairdresser). She was so impressed with them she asked could she give one to each client with their coffee. I said sure. I rolled half of them in coco powder the rest in icing/powdered sugar. It's nice to see the Hercules family growing. Everyone seems to fit right in. Thanks for your hard work recording Craig and Dylan for editing. Good job all. 🐨🕊

So funny, I was watching the old video of these and wishing they were on the website cause my pregnancy cravings have been chocolate truffles and chocolate with peanutbutter.
I have a request, in Australia they have a candy bar called Cherry Ripe, I'd love it if you recreated this! Chopped black cherries, with the juice, mixed in with shredded coconut so it makes a sticky ball and then enrobed in dark chocolate. You could make a mix though, coat some in dark, some in milk and some in white chocolate!

I live in California. If I ever make it to New York, I might see you at Hercules Candy! But this is a recipe you can make at home. Steve showed us how to make the ganache center and gave the proportions. 1 cup heavy whipping cream to one pound of chocolate. And he has showed us how to temper the chocolate and cover the ganache center with it.
I am well aware since I do have a hobby in candymaking, but the main reason to visit, other than to eat the candy, would be to learn more about it from experienced makers.

Yes! I used to work at a bakery and we used scoops that were sized for specific weights (1 oz., 2 oz., etc). It even had a release trigger and were really durable. I believe you can get them from any kitchen utensil wholesale
My favorite flavor of truffles are Amaretto! Marshall’s in Mackinaw City, Michigan have the best ones! On top of their fudge and salt water taffy mmmmm 🤤

Last year I made about 400-450 for family, friends, church....I absolutely love truffles, so I am going to make these....or try my hand at it. By what you showed, it looks like you scald the cream... What was some of the first jobs you remember learning how to do pertaining your family’s business, Craig? Have you done a video on what it was like growing up as the candy man’s kid? My dad started his own business when I was a kid and I remember coming in on the weekends and helping out.
You can also roll truffles in cocoa powder or sprinkles if you want for a different texture. And Craig did you know you can use vegan milk or cream to make ganache (truffle filling). I do it all the time because I can’t eat milk. You can make some truffles for yourself again.

hey! why don't you guys shape them like one big square or rectangle and then just easily cut them into smaller squares so the shaping takes less time to be done, like the caramel you use you know? I'm early and haven't seen the full video, but it seems so much quicker that way... anyway just an input. love the videos!
Not any time soon, it takes so long to make so few that the only way we could make them is if we sell them at almost insultingly expensive prices 😂 So we just spend our time making candy that is more time efficient.
What did you use for flavoring the raspberry and orange ones? In general, do you have suggestions for flavorings that don't have any food coloring? (We have food coloring allergies in the home.)
I always thought that Joe was just part time there and except for Karen who's Hercules longest serving employee today turnover comes with a family business even more now than decades ago. Indeed some are searching for work even as their working if it pays more $5 give or take per hour and many even leave during a shift because their that under water. It was a bit shabby that Hercules Candy waited to be asked why Joe was gone instead of taking the next video to wish him well since it he left a month before they mentioned it..

I'm in Arlington! Just order with a shirt and one ice pack or two ice packs and your order should be fine! Definitely dont order when it's over 90 tho
