This one in particular had me saying, "How much more onion do you need?" And by the end, my answer was a resounding, "All of it!" Can't wait to try this one!
My All In Onion Dip has the same ingredients plus white onions, usually vidalia, though not the same amounts. In mine the white onion is caramelized and set aside, the yellow onion is browned, the red onion and shallot is softened, the dried minced onion is simply hydrated in the mix, and the green onions and chives are raw. The white, yellow and red onions and the shallots are small diced, the green onions are quartered and sliced thin, and the chives are chopped extremely small. Gave the recipe to somebody once who thought the dried minced onion was pointless. I reckon it depends on how many you add, and I add way more than shown in this video, and just in case you're wondering, they do rehydrate by being added to the moist cooked onions and even more when they sit in the mayo and sour cream mix, so they will get tender, be patient. Folks also put this on sandwiches and rave about it, so saving some back to use as a condiment ain't a bad idea, but it won't keep as long as other condiments. Have also made a hot dip with this recipe by adding cream cheese, white cheddar, mozzarella and parmesan, but will sneak in some pepper jack now and then.

The reason the onions are falling apart when you’re cutting them is because you cut off the root, leave the root on to make dicing easier and cut it off after dicing or cut to the root when dicing to make life so much easier

To cut down on the crying while dicing. Try placing the onions in the freezer for 15-20 minutes before cutting. It's a warm onion that let out the gas. Also to make the sour cream 'thicker' take a cheese cloth and placing several scoops of sour cream in the center make a bag out the cloth by bringing the corners together and squeeze out some of the fluid from the sour cream. Also remember warm is the enemy to thick sour cream so keep it chilled as long as possible. You could also extend that by placing the the bowl of dip in an ice bath when serving.
I made my own version of this dip on Saturday night for use during the Super Bowl. It took a long time to finely dice a yellow onion, a red onion, and a large shallot. That was the hardest part, though. I sauteed all three kinds of onion (about half of what I cut) with some olive oil, added 4 cloves of garlic. Let it cool, then mixed in 2/3 sour cream and 1/3 mayo. Added a bunch of dried onion bits. Then I added Worcestershire sauce, hot sauce, some Smack Ya Mama Cajun seasoning and dill. While it was different than the classic "Onion Soup powder in Sour Cream," dip, my version was really good.
I always add dill to my onion dip. I think it's a great complementary flavor. Sometimes I'll add bacon, because...bacon. I've never used so many onion types -- usually I only use scallions and chives. I've only used suateed browned onion a couple of times. It definitely adds a layer of complexity but I like the bright freshness of the raw green onions.
We're on a near daily raw vegetable sticks trip + I live my best life on an overall low carb diet and I love onion. So that delightful onion dip is on the to-devour-list for the weekend. Since (American style) sour cream still isn't available in Germany, I'll substitute with a creme fraiche/cream cheese mix. I am salivating 🤩
Made it last night with some Miracle Whip and Greek yogurt..... damn good after overnight in the frig. I suggest the juice of 1/2 lemon. If you really want to bump it up sauté the onions in 1/4 cup red wine and reduce way down to almost nothing.

I made this today and it was pretty tasty. Then I had some after it had been in the fridge for 8 hours and it was the BOMB. Chef John is right about the green onions and chives. Add those just before eating, as they must be fresh. The result is a truly amazing onion dip. Also, I used bacon fat instead of olive oil to sauté the onions because duh.
We had a set of bowls for chips and dip exactly the same as the chip bowl in this video. You're missing the little dip bowl from the set, but the dip tastes great straight from any bowl.

If you keep your knife super sharp you dont have to worry about it so much. A dull knife smashes the onion a bit releasing more syn-propanethial-S-oxide. This is the compound from onions that burns your eyes.. Trust me, sharpen your knife regularly.

I have done home-made onion dip before but it was never as good as the quick stuff you make with onion soup mix. But I thought I'd try yet again since he says it's like the soup mix version. And this time it turned out great. Even better than soup mix! I guess the dried onion made all the difference. Let me tell you I am shocked.
My "initiation" to onion dip was years and years ago when I worked at camp, and the counselors were having a night off. Someone brought onion dip flavoured with (you guessed it) those little dry pieces of onion from an onion soup mix. I thought I was in heaven! And now, I see this!!!! Nom, nom, nom, nom! I gotta have it!

Chef john, nice recipe, on that whole onion you cut in half, i would put a box grater in a bowl, grate 1/2 of it to get all that onion juice out to add to the dip as we like our onion dip with a strong flavor in rural Kentucky, try it once, it is good

Costco's Kirkland brand wavy chips are an excellent, sturdy potato chip for dipping.

Onions and garlic are the best
I find it works much better to leave the root end on the onion to dice. That way it stays together and you have less waste.
Also, 2-3 horizontal cuts give you more consistent pieces.

If you keep your knife super sharp you dont have to worry about it so much. A dull knife smashes the onion a bit releasing more syn-propanethial-S-oxide. This is the compound from onions that burns your eyes..
Trust me, sharpen your knife regularly.
Unless you're a contact lense wearer. Then you can watch as the others cry while you chop the onions bahahaha! 😈
I find a squeeze of lemon juice helps a bit when you're mixing everything together

MAKE THE THIRD! ;) Chef John is one of my top two UA-cam chefs. Recipes are always rock solid and sooo tasty. I cooked his spaghetti sauce last weekend to make a deep dish pizza, his hot & sour soup couple of days ago, his brownies a couple weeks ago, and .. Oh the bacon wrapped stuffed chicken breasts ..

I have done home-made onion dip before but it was never as good as the quick stuff you make with onion soup mix. But I thought I'd try yet again since he says it's like the soup mix version. And this time it turned out great. Even better than soup mix! I guess the dried onion made all the difference. Let me tell you I am shocked.

My "initiation" to onion dip was years and years ago when I worked at camp, and the counselors were having a night off. Someone brought onion dip flavoured with (you guessed it) those little dry pieces of onion from an onion soup mix. I thought I was in heaven! And now, I see this!!!! Nom, nom, nom, nom! I gotta have it!
That's how I was taught. Onion soup mix mixed with a tub of sour cream. Yummy, salty goodness. Can't wait to try this homemade version.

in Australia we'd get powdered french oinon soup and mix it with sour cream and that was our onion dip

Chef john, nice recipe, on that whole onion you cut in half, i would put a box grater in a bowl, grate 1/2 of it to get all that onion juice out to add to the dip as we like our onion dip with a strong flavor in rural Kentucky, try it once, it is good
