Rocky Road pancakes are absolutely amazing! With the gooey marshmallow and melted chocolate chunks, it's gorgeous! It's more of a dessert pancake than a breakfast pancake though!

Well all you have to do is add almond/coconut/oatmeal milk, olive oil instead of egg (or use no egg needed pancake mix), and use coconut oil to the pan.

Hi Gemma! My son still LOVES to watch your videos. He is always saying your name "Gemma, Gemma, Gemma!" and "mmm, yum yum!" haha. Have you ever made a white chocolate cake before? I love white chocolate, REAL white chocolate (which has a certain percentage of cocoa butter in it, the "white" chips in the stores are not true white chocolate, just sugar). Anyway, I basically used your double rainbow cake recipe (without the dye, obviously) and while mixing everything I also mixed in a white chocolate ganache. It just came out of the oven and looks and smells amazing! You are me and my son's #1 baker to watch! If I switch the channel my son gets mad at me. haha

OMG, I love love love this recipe! I’ve been experimenting lately with different flavored pancakes, so this one comes right on time! My favorite so far is the apple cake pancake :) I use your recipe for the pancakes (it’s the best one I’ve ever tried) and just add some grated apple, cinnamon and Christmas cookie spice (it’s called Lebkuchengewürz in Germany) and also honey with the melted butter at the end. It’s sooooo delicious, it tastes just like an apple cake! Sometimes I like to add some oats and chia seeds to make it a little bit crispier (and healthier :D ) Thank you so much for the amazing recipes, you are wonderful!
Gemma, I use toddler food carrots (organic, of course) instead of grating my own carrots. They have the added texture. I macerate the raisins in a little bit of rum to soften, I add ginger and cloves to the cinnamon for a spicier version. Yes, on the cream cheese frosting and pure maple syrup too.
At home, I like to make chocolate chip blueberry ricotta pancakes. Also, the cherry chocolate chip version is extraordinary. I have never had a strawberry version, because I think the chocolate eWorld overpower it, but I would love to try a strawberry vanilla bean version. Thanks for being an encouragement, Gemma!

For a long time my all time fav. pancakes were the banana oat pancakes. I would also mix in nutella to make them chocolatey or chocolate chips. But let me tell u these r my other new fav now!! Ty! My toddler approved. :)

These look delicious! Our favorite pancakes are the easy Martha Stewart pancakes. We sub half of the milk for plain yogurt (not low-fat) to make them nice and fluffy!

One of my favorite pancake recipes in Griddle Cakes. they're basically cornbread in pancake form, with cheese, bacon and chives. they are so delicious. there are many variations of them all over the place but leaving out the bacon is NOT ALLOWED!! haha thanks for considering this recipe Gemma!!!
